Little Miss loves when I get my Starbucks fix because she knows the stoppers/ stir sticks are saved for her food as picks! (Thanks MOMables for this fabulous idea!)

I've been using these Chebe Pizza Muffins in Little Miss' lunchbox for almost two months now. I've received a few comments and even emails asking me about them and to post the specifics of how I make them. Before I left for work this morning, I had thrown a rotisserie (uncooked) chicken into the crock pot and covered it in an entire bottle of Zesty BBQ Wing sauce. Mmm... we enjoyed it tonight for dinner with steamed veggies. It was delicious! So much so, Little Miss ate three helpings... AND requested some in her lunch! :)

Lunch Made Easy: Cauliflower Crust Lunchbox Pizza (with recipe)

Pizza is a favorite of Little Miss (and me too)! One reason since going gluten-free, I've been enjoying finding and making her fun alternatives to the "traditional crust" (such as the Chebe pizza muffins I made previously).

There are endless cauliflower crust recipes out there, most are very similar but with a twist on the seasonings and toppings used.
Here's my version which yields two crusts that fit perfectly inside this EasyLunchboxes container:

Lunch Made Easy: Luck of the Irish

Saint Patrick is the most well known patron saint of Ireland.
St. Patrick's Day (basically) commemorates him and the arrival of Christianity in Ireland. It was made an official feast day in the early seventeenth century but has become a celebration of Irish culture in general.
Keeley (meaning beautiful in Gaelic) was given to me not only because of our Irish heritage but because I was born right in between the Ides of March and St. Patrick's Day (on the 16th - this Friday). I also was given our family name that moved to the States from Ireland as my middle name (McGuire).
My Irish ancestry is something I cherish and love sharing with my daughter.

My bento blogger friends and I are doing a St. Patty's Day blog hop today ~ Rather then waiting until the end of the week, we figured share ideas now so that y'all can use them! Right?! :)

Lunch Made Easy: March into Spring

Ahh, it was a simply gorgeous, spring like day today! Little Miss and I went for a long scooter ride this afternoon - well, she scooted I walked ;-) Just gorgeous and it had me so excited for warm weather again and sunshine!
