Lunch Made Easy: GF Cauliflower Crunch Salad for Work

Over the past few years, I've shared various lunches and round-up posts of the foods I pack for myself for work.

Being a mom and working full-time is a challenge and an adventure! Quite often, we focus so much on our kids foods we forget about ourselves and don't make the effort to pack ourselves a balanced meal to get us through our work day.

One of my favorite things to pack? Cold pasta salads. Great for using up leftover pasta from dinner the night before.

Lunch Made Easy: Cauliflower Crust Lunchbox Pizza (with recipe)

Pizza is a favorite of Little Miss (and me too)! One reason since going gluten-free, I've been enjoying finding and making her fun alternatives to the "traditional crust" (such as the Chebe pizza muffins I made previously).

There are endless cauliflower crust recipes out there, most are very similar but with a twist on the seasonings and toppings used.
Here's my version which yields two crusts that fit perfectly inside this EasyLunchboxes container:

Lunch Made Easy: GF Pizza Muffins

I love pizza. So much so I would eat it every.single.day... if I could. I don't think my thighs would take too kindly to it, however. ;)
Little Miss loves pizza too (what kid doesn't, right?) so she and I baked up some gluten and nut free pizza muffins tonight using our Chebe bread mix.

Lunch Made Easy: Happy Birthday Dr. Seuss!

Friday is Dr. Seuss' birthday! Little Miss has been so excited all week - she knew she was getting a special lunch and she has her Seuss shirt, socks, and her "Yot in the Pot" doll set out for school tomorrow. :)

Lunch Made Easy: Snowy Lunch for a Snowy Day

As I type, the snow is coming down outside... it has been since late afternoon here. *sigh*
Little Miss was excited though ~ She said it looked like Christmas! Then asked to go build a snowman... lol, so the lunch for Wednesday is fitting. :)

Lunch Made Easy: Mama's Bento

Little Miss is off school today and tomorrow for conferences, so I get a break for making her lunch!
Mama still needs to eat though. ;)

I'm in a group on FB with a lot of the other Bento Bloggers. We were discussing how long it takes us, on average, to put the lunches together and I mentioned that I usually make mine the same time as I'm putting together lunch for Little Miss. So today, I figured, why not highlight a typical "Mama Bento".

This mama is sick and uninspired this morning. Battling ear aches and a sore throat. My voice is shot. Somehow I got up, made lunches, dinner in the crockpot, and I'm going to stumble to work. We'll see how today goes. (Okay, sorry, enough of the pity party!)

Lunch Made Easy: Thankful Thursday

Thankful Thursday: I am truly thankful for my wonderful family. Without them, I would be lost! I am thankful for my beautiful daughter (Little Miss) and my supportive boyfriend. I am thankful I have a wonderful job with people that I not only call co-workers but friends. I am thankful for my daughter's amazing new school and all the opportunities she is going to have there. AND of course I am thankful for my very special blog readers and fellow blog buddies who take the time to enjoy my posts and inspire me as well. :)

Lunch Made Easy: First Full Day of School

Today is Little Miss's first full day of school, meaning first lunch of first grade :) that's a lot of firsts! lol
Her teacher is just wonderful! She has been so great in communicating with me about her peanut allergy and in helping to make her classroom peanut free.  *Fingers crossed* the other parents are receptive and understanding.

My little miss has her last full day of school today! I'm so geeked for her Kindergarten graduation/ celebration tomorrow.
She and I are making a fun treat for the class tonight - I'll post that either tonight or tomorrow early AM.

Lunch Made Easy: Terrific Tuesdays!

Terrific Tuesday's... Once up and at em', the realization of only having three more blaring alarms until the weekend again!

What else is great about Tuesday?
1) My little miss has five full days left of school + two half days.
2) I plan on stopping at Starbuck's today to get my free iTunes card (10 free summery songs) when I buy any Frappuccino *mmm, high calorie coffee drinks, drool!* (don't judge me) lol.
3) Don't forget the old folk rhyme: "Tuesday's child is full of grace". Not sure how that applies to this posting, but it sounds good. ;)
