One thing we love packing for lunches are salads. I'm very blessed that my Little Miss loves a salad as much as I do (so long as I don't pack them every day for her, lol). This began by setting an example - I would eat mine and "ooo" and "ahh" over how good it was, all the vitamins I was getting, etc.
She eventually became curious and wanted to try for herself. Guess what? She loved it. At that time, she actually preferred spinach salads over romaine but will now eat both. I usually mix her greens when I make them now.
I, too, pack salads frequently for work. I don't want to eat the same one every.single.day so it's good to mix it up with new toppings and variety. That's where today's lunch idea comes in! A yummy Pear & Seed Chicken Salad packed in our ECOlunchbox cube.

Today's recipe is one of my favorites: A smoothie! I make myself a smoothie almost every single day. Sometimes I make them fresh in the morning and drink them on the way to work. Other times I make a big batch ahead and freeze them in plastic freezable jars so that they're perfect by lunch.
That's what's so great about our recipe today - Enjoy it fresh for breakfast or make it ahead and freeze for lunches! Filled with protein and fresh fruit, it's sure to be a hit with your family!

First up, I'm sharing a recipe that's a play on an old classic - Tomato Soup Cake. Only ours are muffins, healthier, gluten free, allergy friendly, and perfect for lunches!
Applegate is known for their delicious natural and organic meats. Up until recently, I couldn't buy their products locally but am so happy that a couple of my stores are now carrying their yummy products - including their cheeses, lunch meats, bacon, frozen foods, and hot dogs.
Lets be real here for a minute: Hot dogs are not exactly considered "good food". We all know the brands out there that make the mystery meat logs and it can be... scary to think about. Sodium nitrates... meat hooves... antibiotics... hormones... Ick! However, they're delicious. I can't resist a grilled dog in the summer time.

So, let me tell you a little story... when Little Miss started her gluten free journey a few years ago, I started following and finding any gluten free blogs I could to learn more and also for ideas.
On that journey, I discovered the amazing and hilarious Erica Dermer of Celiac and the Beast. I also had the opportunity to finally meet her in person at the GFAF Expo in 2013.
She then ventured to Vegas, like I did, for the First Food Allergy Bloggers Conference last November where she gave me a copy of her book to read and review.
Cameo Edwards (a Michigan native by the way) opened Crave in 2003. It was the first gluten free bakery in the San Francisco Bay area.
And although the bakery is now closed, Cameo decided to put all of their delicious recipes in to a 10th Anniversary cookbook!
To my surprise, upon receiving an electronic copy (Kindle), and then later hardcopy, of the book is the recipes are not only gluten free but allergy friendly! I'll explain more on this below.
