Holiday Baking: Gluten Free Horizon Organic Eggnog Cookies

I love creating Christmas cookies with my Little Miss for the holidays. The hardest part isn't the baking... it's keeping her from eating them all!

She just recently tried eggnog for the first time. Her first taste was of my dairy free nog. Then when I told her our friends at Horizon wanted us to come up with a fun holiday recipe, she was delighted to discover they made eggnog for her dairy loving heart. So, we gave it a go and made these yummy Gluten Free Eggnog Cookies.

Zucchini Oat & Flax Seed Chocolate Chip Cookies {Gluten & Top 8 Free}

Last week on our Facebook page, I asked everyone what their tips & tricks were for getting more fiber into their family's diet. 

It can be tricky when eating gluten free to ensure you're getting enough. Especially with kids -- Veggies aren't exactly the first thing they reach for in the fridge for a snack.

I'm thankful my Little Miss does a good job eating her vegetables, but that doesn't mean I don't still worry about getting her a good balance of insoluble & soluble fibers (beside the other nutritional values). 

I love making baked goods packed with Fiber and Omegas! Like these Zucchini Oat & Flax Seed Chocolate Chip Cookies. They're Gluten Free & Top 8 Allergen Free. Little Miss said they were the "best cookies you've ever made"! Seriously

Apple SunButter Baked Oat Bars {Gluten Free & Allergy Friendly}

There are some items I am admittedly addicted to...
Crunchy Chips
Pickles
(Handfuls of) Enjoy Life Chocolate Chips
Coffee
... and SunButter mixed with Apple Butter.

I eat SunButter & apple butter on gluten free toast almost regularly. I even make it into a quesadilla for lunches! When it's warmed, it's soooo ooey-gooey delicious. Seriously. 

Not a fan of apple butter? That's okay. You can make this recipe with any of your favorite jams or jellies. Heck, Little Miss thought it would be amazing with SunButter and chocolate chips even. She's right - but as you read above, I like to eat handfuls of them... every night... so we were out. Oops. ;) *add more to grocery list, again*

Fall Baking: Chunky Apple Pumpkin Muffins #Recipe {Gluten Free & Top 8 Allergen Free}

Once those temperatures drop and the leaves start to change, there's a new feeling in the air... a crisp, fresh start to each day.

I can't think of anything else other than baking.
And not just any baking... it has to involve apples, pumpkin, and warm spices. 

Thankfully, my little sous chef agrees. 
We usually set aside time on the weekends to head into the kitchen and start mixing and creating. This recipe was from one of those weekend adventures. 

Gluten free and free from the Top 8 most common allergens, these allergy friendly delights are sure to warm your belly and your home with their delicious smells and taste!

Baked & Glazed Chocolate Chocolate Chip Donuts {Gluten & Top 8 Allergy Free} #Recipe

Little Miss and I are always testing recipes. 
Sometimes they're utter failures. Sometimes they're near miracles.

A week and a half ago, I shared a sneak peek on Facebook & Instagram of one we'd been working on. It was on its final "tweaks": A Baked Chocolate Chocolate Chip Donut that was Gluten & Top 8 Allergy Free. That's right... No eggs, no dairy, no nuts, no soy, no wheat, etc. 

Not only was it food allergy friendly but soft, plump, and delicious to boot! Let's be honest, that's rare when it comes to free-from recipes. I've tried my hand at many donut recipes before this - that's not to say the others aren't good, I wouldn't share them if they weren't...  but as you bake your skills and knowledge evolve, and I'm quite pleased with how this turned out! Obsessed, actually. They're darn delicious.

If Jesus was gluten free and had food allergies, he would serve these in heaven. Just sayin. 

In other words, make these for breakfast and watch your family melt at your amazing skills in the kitchen. *High Five!* To quote Little Miss: "This is the best donut EVA!

Crave Gluten Free Cookbook Review & Giveaway Prize Pack!

Cameo Edwards (a Michigan native by the way) opened Crave in 2003. It was the first gluten free bakery in the San Francisco Bay area. 

And although the bakery is now closed, Cameo decided to put all of their delicious recipes in to a 10th Anniversary cookbook

To my surprise, upon receiving an electronic copy (Kindle), and then later hardcopy, of the book is the recipes are not only gluten free but allergy friendly! I'll explain more on this below.

In case you missed our post last month, we recently partnered with Enjoy Life FoodsEach month we'll be featuring a different line of their amazing allergy free food products

All Enjoy Life products are free of the Top 8 Allergens and Gluten Free. They're made in a dedicated facility and have no artifical anything. They're also a member of the Non-GMO project

Last month, the task was to come up with fresh recipes and ideas using Plentils for lunch. This month, well it certainly was a challenge... my mission was to figure out clever ways to use Enjoy Life Foods Boom Choco Boom™ chocolate candy bars. 



I love these candy bars. And I mean it, I love them like I want to marry them. They're delicious and addicting. But how was I going to incorporate candy bars into lunch ideas while trying to still maintain a healthy balanced meal? So, I put my thinking cap on and got to work.

Homemade Apple Pie: Gluten, Nut, Dairy, & Egg FREE #Recipe

"I started singing, bye bye Miss American Pie..."

"Bye bye" because this Homemade Apple Pie was gobbled up as soon as that knife hit it!

I was thrilled to have family in town last weekend from Indiana- My sister, grandmother, and aunt. They were staying by my folks house, and my younger brother's birthday happened just days prior. I knew we were going to be having a mini-celebration since everyone was here. 

Celebration means one thing to me: Dessert! 

I love baking up allergy friendly goodies for Little Miss and have no problems bringing our own to events. I get even more joy out of trying something new and when they pass the test of others, not ever knowing it's gluten free! What's even greater? This pie is also nut free, dairy free, & egg free. Boom.

Food for Thought: Chewy Chocolate Mint Cookie Cups ~ Gluten, Nut, & Egg FREE

Since buying our Andes Creme de Menthe Baking Chips, I've been using them all over the place - added into Chobani Greek Yogurt, sprinkled into my coffee... anywhere to add a little "mint kick", that Little Miss and I love so much!

As we were grocery shopping, and picking up another bag, I was really craving some freshly baked cookies... so she and I put our thinking caps on and came up with these delicious little gems! Perfect for snacks, dessert, and even in the lunchbox. Yumm-o!

I've received a few comments and even emails asking me about them and to post the specifics of how I make them. Tomorrow we're going over to a friends house to have a small get together and to celebrate her birthday! (c'mon, we ALL love Oreo's let's just go ahead and admit that - I could eat a whole package, lol) I decided Oreo Cheesecake Cups would be just perfect!
