Back in March, I shared a teaser photo on our Facebook page of these fabulous cake pops we made. It wasn't until we made more last evening, for guests that came over for dinner, that I realized I hadn't posted it yet! (D'oh!)
So, I managed to snap a few more photos before the girls devoured them! Little Miss was so excited to share one of her new favorite recipes with friends. 
They're Gluten & Top 8 Allergy Free! That's right. Free from dairy, eggs, wheat, peanuts, tree nuts, soy & more. Perfect for dessert or a sweet popable snack. ;)

They're simple to make and packed full of nutritious ingredients - None of those icky artificial colors or expensive natural dyes! Just spinach and blackberries. That's it! Keep reading to see how we did it...

Exactly one year ago today my Little Miss started her {gluten free} journey. We had already been packing school lunches for over five years and eating {nut free} due to her food allergies, but this would be a life changing decision.
In the past year my Little Miss has changed so much! No more tummy aches. No more digestive problems. No more random vomiting. Her eczema is better. Her asthma is better. Her overall attitude is better... Because she FEELS better!  I am one relieved and smiling Mama!!  A day so special could not go without a celebration! Food for Thought: Pay It Forward - Holiday Food Pantry Donations

I love nothing more this time of year then really focusing on all the ways we can give back and pay it forward.

 

Many schools, churches, and towns hold food drives to support local food banks and pantries around the holidays. It's something Little Miss and I have always enjoyed giving to over the years, even in times we didn't have much to spare.

 

In the last couple years, we have also made it our goal to really focus on allergy free families in need. Think about it: A family in need. Their kids have food allergies - dairy, soy, eggs, or more. What options are available to them? Does that child go without? Or do they eat what's available and suffer because of it, perhaps more?

 

 

Lunch Made Easy: MOMables Monday - Pumpkin Pancakes for my lil' punkin!

When I saw this Pumpkin Pancakes post on MOMables last week by Chef Corey, I knew Little Miss would LOVE them!

We of course made ours {Allergy Friendly} and added some yummy chocolate chips!

Lunch Made Easy: Fast & Fresh, Simple Salad

I am very thankful over the past few years Little Miss has grown to *love* eating salads. A great meal and source of nutrition, it also makes for a fast & fresh, simple school lunch!

 

This lunch box could easily be made dairy free by substituting the mozzarella cheese with dairy-free mozzarella style shreds. It's also egg-free, gluten-free, peanut-free, & treenut-free.

 

Allergy friendly food can be colorfully delicious!

Food for Thought: Junior Mint Cookies

Oh yeah, you heard me... Junior Mint Cookies. I know what you're thinking - Junior Mints AND Cookies? Those are two incredibly powerful forces being combined. I know. It's amazing. Trust me.

When I was trying think up some cookie ideas, this came to me. I thought about my Junior Mint Brownies (<--- click name for recipe & info) and how the topping made that delicious minty shell when cooled. I figured that HAD to be amazing on a cookie, right? Oooohhhh yeah.
