Fall Baking: Chunky Apple Pumpkin Muffins #Recipe {Gluten Free & Top 8 Allergen Free}

Once those temperatures drop and the leaves start to change, there's a new feeling in the air... a crisp, fresh start to each day.

I can't think of anything else other than baking.
And not just any baking... it has to involve apples, pumpkin, and warm spices. 

Thankfully, my little sous chef agrees. 
We usually set aside time on the weekends to head into the kitchen and start mixing and creating. This recipe was from one of those weekend adventures. 

Gluten free and free from the Top 8 most common allergens, these allergy friendly delights are sure to warm your belly and your home with their delicious smells and taste!

{Enjoy Life Foods Friday} Chocolate Baking Chips Lunch Fun #GlutenFree #AllergyFriendly

Happy November!
Another month and that means another Enjoy Life Foods Friday!

In case you missed our last two segments, each month Enjoy Life Foods has challenged me to come up with lunch box ideas using a certain product. In September the focus was Plentils and in October it was Boom Choco Boom chocolate bars. 

For November, the challenge was once again chocolate. Oh darn! Forced to bake with and eat lots of gluten & top 8 free chocolate. I'm sure you're crying a river for me! lol

That's right - This month is alllllllllll about the chocolate lovers out there. We're sharing delicious lunch box ideas using Enjoy Life Foods Chocolate Baking Chips, including their brand new Dark Chocolate Morsels! *drool*

Fall Goodness: Crockpot Apple Pumpkin Butter #Recipe

I have been trying to control myself.
Trying not to jump into the apple and pumpkin everything bandwagon too soon

When September finally came, I sprung into action. 
I diced up my apples, gathered my ingredients, plugged in my Crockpot Slow Cooker, and got to work. 

My house smelled heavenly.
All thanks to this Apple Pumpkin Butter recipe.

Halloween is approaching fast, only two more days to be exact.
Goblins and ghouls, candy and treats.
Checking out the costumes of everyone you meet!
You don't need to get super detailed or spend a lot of time adding a few fun Halloween touches to your kid's school lunch box.

Lunch Made Easy: It's beginning to look a lot like Christmas!

I had the idea to make Little Miss's lunches an advent, of sorts. :) Every day I intend to somewhere include a number somehwere in her lunch with how many days are left until Christmas. As of Monday, there will be 27 days left. She was VERY excited when I told her I'd be doing this!

Craft Complete: Thankful Pumpkins

I was completely inspired to do this project this afternoon with Little Miss by One Artsy Mama - She posted a picture of a pumpkin her family had done on her facebook page and I thought it was such a great idea!

We happened to have two little pumpkins still in great condition from Halloween that were untouched. So after lunch, Little Miss and I set out together to make our "Thankful Pumpkins".

Lunch Made Easy: Hello Kitty & the ELB

Last night I was so happy to hear that big brown UPS truck pull infront of my house. I knew exactly what it was - My new Easy Lunchboxes! Even though to Little Miss, the only difference she'll notice is the fun lid colors, I like how much thicker they are than my disposables. Plus they're also dishwasher, microwave, and freezer safe - Win!

I also realized this morning I had not had a Hello Kitty appearance in quite sometime (that is just unacceptable, especially considering how much Little Miss LOVES her).

Today is Halloween! Finally. :) lol
I have been making Little Miss Halloween lunches for almost two weeks now, sooooo I'm ready for a change up. ;)

They don't really "celebrate Halloween" at my daughter's school, so I've been doing my best to just try and make it fun for her...
