Zucchini Oat & Flax Seed Chocolate Chip Cookies {Gluten & Top 8 Free}

Last week on our Facebook page, I asked everyone what their tips & tricks were for getting more fiber into their family's diet. 

It can be tricky when eating gluten free to ensure you're getting enough. Especially with kids -- Veggies aren't exactly the first thing they reach for in the fridge for a snack.

I'm thankful my Little Miss does a good job eating her vegetables, but that doesn't mean I don't still worry about getting her a good balance of insoluble & soluble fibers (beside the other nutritional values). 

I love making baked goods packed with Fiber and Omegas! Like these Zucchini Oat & Flax Seed Chocolate Chip Cookies. They're Gluten Free & Top 8 Allergen Free. Little Miss said they were the "best cookies you've ever made"! Seriously

Apple SunButter Baked Oat Bars {Gluten Free & Allergy Friendly}

There are some items I am admittedly addicted to...
Crunchy Chips
Pickles
(Handfuls of) Enjoy Life Chocolate Chips
Coffee
... and SunButter mixed with Apple Butter.

I eat SunButter & apple butter on gluten free toast almost regularly. I even make it into a quesadilla for lunches! When it's warmed, it's soooo ooey-gooey delicious. Seriously. 

Not a fan of apple butter? That's okay. You can make this recipe with any of your favorite jams or jellies. Heck, Little Miss thought it would be amazing with SunButter and chocolate chips even. She's right - but as you read above, I like to eat handfuls of them... every night... so we were out. Oops. ;) *add more to grocery list, again*

Gluten & Allergy Free Jewish Hamantaschen Cookies for Purim #Recipe

Purim is considered one of the most fun & joyous Jewish holidays. (It's often referred to as the "Jewish Mardi Gras"). It celebrates when the Jewish people were living in Persia and saved from a plot to destroy them. The story is recorded in the Book of Esther (you can read my previous post on it HERE)

In 2014, Purim begins at sunset on March 15th and ends at nightfall on the 16th. 

A common treat during this time are Hamantaschen (Hamantashen) cookies. The triangular fruit-filled cookies are suppose to represent Haman's hat. 

Just because you're gluten free or have food allergies doesn't mean you shouldn't be able to enjoy this traditional treat just like everyone else! Here's my take on this yummy cookie, made gluten & top 8 allergy free

Homemade Apple Pie: Gluten, Nut, Dairy, & Egg FREE #Recipe

"I started singing, bye bye Miss American Pie..."

"Bye bye" because this Homemade Apple Pie was gobbled up as soon as that knife hit it!

I was thrilled to have family in town last weekend from Indiana- My sister, grandmother, and aunt. They were staying by my folks house, and my younger brother's birthday happened just days prior. I knew we were going to be having a mini-celebration since everyone was here. 

Celebration means one thing to me: Dessert! 

I love baking up allergy friendly goodies for Little Miss and have no problems bringing our own to events. I get even more joy out of trying something new and when they pass the test of others, not ever knowing it's gluten free! What's even greater? This pie is also nut free, dairy free, & egg free. Boom.

SunButter & Chocolate Cake Pops! {Gluten & Allergy Free} #Recipe

Back in March, I shared a teaser photo on our Facebook page of these fabulous cake pops we made. It wasn't until we made more last evening, for guests that came over for dinner, that I realized I hadn't posted it yet! (D'oh!)

So, I managed to snap a few more photos before the girls devoured them! Little Miss was so excited to share one of her new favorite recipes with friends. 

They're Gluten & Top 8 Allergy Free! That's right. Free from dairy, eggs, wheat, peanuts, tree nuts, soy & more. Perfect for dessert or a sweet popable snack. ;)

This past Saturday we celebrated Christmas with my family.
My folks are the most amazing individuals when it comes to Little Miss' food allergies/ intolerances. They keep a peanut free home and well stocked with gluten & nut free treats for her at all times. So lack of choices for my girl wasn't an issue, thankfully, because I had baked up a batch of these delicious {Gluten Free} Chocolate Chip Cheesecake Cups... aaaaand then left them at home in the fridge. *D'OH!*

Food for Thought: Chewy Chocolate Mint Cookie Cups ~ Gluten, Nut, & Egg FREE

Since buying our Andes Creme de Menthe Baking Chips, I've been using them all over the place - added into Chobani Greek Yogurt, sprinkled into my coffee... anywhere to add a little "mint kick", that Little Miss and I love so much!

As we were grocery shopping, and picking up another bag, I was really craving some freshly baked cookies... so she and I put our thinking caps on and came up with these delicious little gems! Perfect for snacks, dessert, and even in the lunchbox. Yumm-o!

My sister bought us this fantastic Wilton star pop mold, so I thought, what a fabulous idea to use the same premise behind the frozen yogurt bites I make for Little Miss' lunches and create fresh fruit, frozen yogurt pops with it!

Food for Thought: SunButter & Banana Muffins with Cream Cheese & Grape Jelly Glaze (GF, NF)

One of the things Little Miss and I enjoy doing most on the weekends is having our time in the kitchen together to bake and try new recipes. She LOVES being my lil' Sous Chef! :)

This one is already a big hit with her, and I enjoyed one this morning with a cup of coffee. It tasted like I was eating a sinfully delicious pastry or donut, but instead it's packed with protein and Vitamin E from the SunButter along with the yumminess of bananas which are heart-healthy and a great source of potassium. They're also gluten and nut free, of course!

Snackable: SunButter & Banana Chocolate Bites (Gluten & Nut Free w/ Dairy Free Option!)

Little Miss stayed home sick today (Tuesday), so her lunch remains in the fridge so she can enjoy that tomorrow when she goes back to school. (She is doing leaps and bounds better now - a little rest and relaxation seemed to have done the trick.)

Since I don't have a new lunch post to share, I figured I would post about these delicious SunButter and Banana Chocolate Bites we made over the weekend!

Food for Thought: Banana Strawberry Orange Muffins

Candy Girl over at BentOnBetterLunches said it best "How I LOVE muffins, it's so easy to sneak in extra goodness, and the sproutlets just see them as little cakes!" Mama sees it that way too. ;)

After what seems like waaaaay too many holiday treats, cookies, cakes, etc this recipe sounded like the PERFECT thing to make today. Mmm...
