Lunch Made Easy: Throw Together Thursday

Hello!! First let me say, the fella and I had a wonderful few days away. Nice to get some "adult time" and relax. I shared just a few pics from our trip on Instagram, if you'd like to check them out here.

We got back last night and boy am I tired! But I wanted nothing more than to just keep hugging my Little Miss - I swear she grew another two inches while we were away. Funny how that works, huh?

Being gone also meant we have a lack of groceries in the house. Thankfully, I was able to throw together this delish School Lunch for my girl. Tuna salad is one of her favorites!

Lunch Made Easy: Rainbow Bento

Completely not on purpose, I realized Little Miss' lunch for tomorrow has the makings for the "Today I ate a Rainbow" chart almost covered - yes!

Red = Cherub Tomatoes
Orange = Mandarin Oranges
Yellow = I always send a Banana with her to daycare/sitter for one of her snacks (not pictured)
Green = Cucumbers
Blue/Purple = Grapes

That doesn't even count the fruits/ veggies she'll have with breakfast & dinner too. :)

Lunch Made Easy: Last Full Day ~ Lunch by Little Miss!

Tomorrow is the last full day of school for Little Miss! *sniff sniff*
She decided for her last lunch at school as a first grader, she wanted to make it herself. How could I refuse such a sweet request!? So she made lunch while I cleaned up dinner.

Little Miss requested some of her Chicken Apple Sausage in her lunch for tomorrow. I try to mix things up so I don't serve the sausage the same way every time, so I figured I'd do a different take on the "MOMables: Classic Deli Box" I made for Little Miss a couple weeks ago that she loved!

Lunch Made Easy: My Bento Loot...

Some of my fellow bento blognesses have posted about their spectacular bento loot recently (such as Candy Girl and Chef Corey, just to name a few).

A Pinterest board was even created for all of us to share our goods. It's pretty amazing actually.

I feel my "collection" is small, in comparison to everyones but when I spread it all out I realized I have more cookie cutters than I even realized, haha! :) I'm okay with this.

I love pizza. So much so I would eat it every.single.day... if I could. I don't think my thighs would take too kindly to it, however. ;)
Little Miss loves pizza too (what kid doesn't, right?) so she and I baked up some gluten and nut free pizza muffins tonight using our Chebe bread mix.

Lunch Made Easy: New Gluten Free Adventures

Little Miss had been experiencing chronic stomach aches for a couple months now and I started to think back about other possible "red flags" (randomly throwing up, "bathroom issues", overall tiredness, etc. - usually triggered during or after meal times). So, I started doing some research and asking questions to some of my other allergy mamas and my bento blog buddies.

I had a feeling that it must be an intolerance to something - figuring it had to be gluten or dairy. After doing more analyzing and discussing her signs/ symptoms with the fella, he really felt gluten might be the culprit, as well. So we decided to start a trial for a few weeks to see if by eliminating it from her diet we might see improvement in those above mentioned areas.

Monday's lunch is her first gluten free bento (and as always, nut free):

Lunch Made Easy: Wheels for Wednesday

It was a busy evening tonight. I quickly made lunch for Little Miss before I headed to a parents meeting tonight at her school (an informal discussion about some new building plans - Yay!) Anyhoo, just got home about a bit ago, so I finished making the fellas lunch, typing up my post to you all now, and then wind down time for a few... busy day again tomorrow.
OH and I should probably tell you all that Thursday (post tomorrow night) will be my last lunch this week because we are going on vacation (WOOT!) I don't want to say too much about the details *yet* because I plan on having some posts about it when we return. :)
I WILL however have some amazing posts I've set up to run while I'm gone featuring some of my favorite bento bloggers and their gorgeous lunch box ideas ~ so be sure to check them out over the next several days!!
