I love King Arthur Flour ~ Once I learned the difference between KAF and "other brands", it became the only flour I started using. They're the oldest flour company in business, dating back to 1790!
After Little Miss started her GF diet, imagine my excitement to discover the Gluten Free line of flours and mixes! What you might not know is they're not only certified gluten free, but allergen free. That's right - they are made in a dedicated facility FREE of the Top 8 Allergens!
I've already posted about the muffin mix. You may have seen them frequently in Little Miss' lunchboxes. We love to make regular and mini muffin batches with fillings like bluberries, apricots, banana chocolate chip, etc. They freeze great too so we can just pop them out and eat when we need!
We've also tried the pancake mix already. So so yummy! Little Miss never noticed a difference from "regular pancakes" and they cook up just the same. Again, you can easily add in berries, chocolate chips, or cinnamon to give them something a little extra special. ;)
Some of the mix directions will tell you to add eggs, milk, etc. You can easily add in substitutes to keep them allergen free and they even give tips on their shop website for which they recommend and why. Love that!
The fabulous folks at King Arthur Flour sent me the chocolate cake mix, yellow cake mix, bread mix, and pizza crust mix to review AND give them away to one of you!! How cool is that!?
I've actually made the bread mix before, as well. This is not a quick bread - you add the yeast, let it rise, etc. so it does take time to make. However, it's soooo worth it for homemade gluten-free bread!
Little Miss *loved* making the bread with me and seeing it transform along the way. It was great for educating too - explaining to her about how it works, why we let it sit and rise, etc. She was fascinated!
When we finished baking our loaf of bread, I actually sliced it in half and put half into the freezer for use later. With the half I kept out, we made french toast ~ YUM! This is *perfect* for french toast because you can cut big, thick slices for it. Even the fella was surprised how much he loved it too! (He told me I could make it every weekend, hehe, I don't know about *that* but it was definitely a huge hit with all of us!)
When we tried the yellow cake mix, I wanted to do something a little outside the box with the mix ;) afterall, anyone can follow directions for a standard yellow cake - why not whip up something fun with it?!
So we made SunButter Banana Chocolate Bars ~ Peanut, Tree Nut, Gluten, AND Egg Free!
I got the idea for this recipe from The Girl Who Ate Everything and adapted for our needs.
Since there were no eggs, you know that we were tasting the batter hehe it was so delicious! We also added a few extra chocolate chips to the top of the bars while they were cooling. Yumm-o!
These bars were better the longer we let them sit and cool. The banana kept them soft/ moist, even days later, and Little Miss has already asked me to make them again! Score one for Mom!
For the chocolate cake mix, I wanted to keep it simple. Following the directions, per the box, but I decided to use my Wilton silicone mini-loaf pan (makes four mini loaves) - this way we could freeze two of them, enjoy one, and share one!
Oh my! Were we in *Heaven* ~ I'm completely serious - they were soft, super chocolately. I would never know they were gluten free if someone served this up! So delicious.
We iced our mini-cakes with a cream cheese icing and added cherries on top. Delish!
For the pizza crust, again like the bread mix, it is a bit time consuming in that you add the yeast and let it rise but if you're able to to take the time it's completely worth it!
Instead of making two larger pizza crusts, as recommended by the box instructions, I divided our dough into four smaller size pizzas that way they were the perfect size for Little Miss to have.
This also gave me the opportunity to freeze the other three so that way I can just pull them out as needed for her to enjoy! A bit of time up front = ready made gluten free crusts done when needed.
