Leftovers for Lunch: Ways to Use Chicken Leftovers!

When I am meal planning for the week, I purposely buy chicken and have it once a week just so I can have the leftovers for lunches. The fella actually teases me about my love of chicken leftovers.

It's my favorite! So versatile and so many ways to incorporate it into different meals.

I figured it would be a great idea to put some of those into one post so the next time you have a leftover chicken breast or two in the fridge, or a container of leftover chicken from a fryer or roaster, you'd be inspired to make some fantastic lunches from the leftovers!

Lunch Made Easy: Zesty BBQ Chicken Leftovers

Before I left for work this morning, I had thrown a rotisserie (uncooked) chicken into the crock pot and covered it in an entire bottle of Zesty BBQ Wing sauce. Mmm... we enjoyed it tonight for dinner with steamed veggies. It was delicious! So much so, Little Miss ate three helpings... AND requested some in her lunch! :)

Lunch Made Easy: Cauliflower Crust Lunchbox Pizza (with recipe)

Pizza is a favorite of Little Miss (and me too)! One reason since going gluten-free, I've been enjoying finding and making her fun alternatives to the "traditional crust" (such as the Chebe pizza muffins I made previously).

There are endless cauliflower crust recipes out there, most are very similar but with a twist on the seasonings and toppings used.
Here's my version which yields two crusts that fit perfectly inside this EasyLunchboxes container:

We had beef tacos for dinner tonight. Little Miss loves tacos so much she jumped up and down, giving me hugs when I told her what I was making (lol, silly kiddo)!
Anyways, with some of the leftover mini-corn shells, I thought it'd be great for her lunch - she was happy to hear that too.

Side note: Little Miss had brown rice pasta Mac n' Cheese tonight and ate it like a champ! I wasn't sure how she'd respond since it is a noticeable difference in taste. She did in fact notice but I made it so cheesy I don't think she cared. lol :) Plus she's totally on board with trying new things to help her tummy feel better (LOVE that girl!)

Lunch Made Easy: Panda Love *rice onigiri*

Little Miss is off school tomorrow (Friday) so I thought this might be a good time to tackle the next Bento of the Week challenge - Onigiri.

I have never done anything with rice like this before, so I was a bit nervous... I figured since Little Miss was going to be home with me while enjoying this, what they hey... good time to go for it! That way, if it was a hot mess, at least I was home to make her something else (LOL).

Well, when it was all said and done, I was pretty darn impressed with how it turned out!

Food for Thought: Crockpot Love - Chicken Drumsticks

This is probably one of the easiest crock pot meals I make - I got going this morning so it will be done tonight, mmm mmm!


Our stores typically will sell the family size packs of drumsticks for 99 cents/ lb. I will then break up the pack into about 3-4 freezer bags, each containing 4-5 drumsticks (depending on how much I buy).
So for $4-5 I can get 3-4 meals out of the chicken! EXCELLENT.
