Lunch Made Easy: GF Cauliflower Crunch Salad for Work

Over the past few years, I've shared various lunches and round-up posts of the foods I pack for myself for work.

Being a mom and working full-time is a challenge and an adventure! Quite often, we focus so much on our kids foods we forget about ourselves and don't make the effort to pack ourselves a balanced meal to get us through our work day.

One of my favorite things to pack? Cold pasta salads. Great for using up leftover pasta from dinner the night before.

Non-Dairy Buttered Noodles with Italian Shrimp #Recipe

I love when a dinner idea comes together so deliciously.
I also love when there are yummy leftovers to pack for lunch the next day.

Since personally going dairy free (for health reasons), I've been trying to plan meals as best I can to fit everyones dietary needs, and wants, in my household. Gluten free... Dairy free... Nut free... lower protein (less meat)... more Omega-3... 

This dish was a hit! It was filling without being "heavy" and was able to fit into our needs as a family.

(Depending on the brands you use, this recipe can also be egg free & soy free.)

Lunch Made Easy: Leftovers - Cook Once, Eat Twice!

"Cook Once, Eat Twice!" 
I learned this philosophy from MOMables and it makes packing lunches so much easier for my family.

As it worked out this week, Little Miss was on Spring Break from school but that doesn't mean we don't still pack lunches! Anywhere she goes because of her dietary needs - to my folks, the babysitter, or a friend's house - we pack it

I was able to turn all our dinner leftovers into deliciously fun lunches this week!

When I pulled up my MOMables menus for the week, it was perfect that pasta & marinara was on the list this week - I had already planned on making spaghetti this evening so it was simple enough to throw in extra noodles for lunch!

Lunch Made Easy: Luck of the Irish

Saint Patrick is the most well known patron saint of Ireland.
St. Patrick's Day (basically) commemorates him and the arrival of Christianity in Ireland. It was made an official feast day in the early seventeenth century but has become a celebration of Irish culture in general.
Keeley (meaning beautiful in Gaelic) was given to me not only because of our Irish heritage but because I was born right in between the Ides of March and St. Patrick's Day (on the 16th - this Friday). I also was given our family name that moved to the States from Ireland as my middle name (McGuire).
My Irish ancestry is something I cherish and love sharing with my daughter.

My bento blogger friends and I are doing a St. Patty's Day blog hop today ~ Rather then waiting until the end of the week, we figured share ideas now so that y'all can use them! Right?! :)
I'm really excited to see every one's work.

Lunch Made Easy: ABC's & 123's

Today's was some ABC & 123 pasta, a babybell cheese cut into umbrella shapes with umbrella picks, and a cup of Mandarin Oranges.


Hope everyone had a WONDERFUL fourth of July weekend!
I got sunburnt at the beach yesterday... totally worth it. :)
