Lunch Made Easy: MOMables Monday - Freezer Stash

Happy July everyone! Can you believe this year is already half over? Yikes!

When I last made the GF Italian Mini Quiches for MOMables Monday, my batch yielded 24 of the quiches, so I had put half the batch into the freezer for use later.
I pulled them out yesterday and put them into the refrigerator so Little Miss could enjoy them again for lunch Monday.
Another great reason why I love have foods done and ready to go in the freezer, lunch = done!

Lunch Made Easy: Fun Day!

Tomorrow is "Fun Day!" at Little Miss' school ~ Much like the Field Day I had as a kiddo in school - outdoor activities, races, contests, etc. Although it's suppose to rain, so most likely they'll be having it in the gymnasium.

Wednesday's lunch for Little Miss is packed in her LunchBots Duo.

She has McCain's smiley potatoes, a nitrate free hot dog I cut up into flowers, carrots with dip, and watermelon dices.

Simple and delish! :)

Lunch Made Easy: SunButter Rice Cake

Little Miss usually gets a rice cake with SunButter once a week, if not in her lunch then as her school snack. (I sometimes share those pics on Instagram if you're ever interested in seeing - you can follow me @keeleymcguireblog).

I always play with raisins decorating them too - flowers, hearts, writing out words like "Hi!" lol, anything to surprise her and make her smile.

Lunch Made Easy: Flower Bagel Bites

Well, I only got home about 45 minutes ago from a long day of travel for work. In that time managed to make two lunches, nibble on some leftover dinner, and put on my pajamas. Now here I sit blogging and then to button up some loose ends for work..that 3am alarm is going to be here before I blink! Good thing I operate well on very little sleep. :)

I love lunches that can be put together quickly but also offer Little Miss lots of simple little bites of different things. Makes for a fun lunch. :)

In the blue flower silicon cup is from a leftover SunButter & jelly sandwich on gluten free, peanut free bread. Instead of wasting it, I cut it up into small bites.
Around it are red seedless grapes.

On the other side of this LunchBots Duo container is a small silicon clover cups of flower cut cheese bites. Beside it are freeze dried mangos.

There are also carrot sticks and a mini banana chocolate chip gluten-free muffin.

Woot! Friday! Finally!! It's been one of those long weeks for us, lol... So I am soooo relieved it's Friday tomorrow. What better way to enjoy lunch then with a smile! Right?! Right! :)

Tonight has been one of those cram session evenings - got home late, which seemingly throws off my entire evening. Oh well, but I did throw together this lunch in probably less than five minutes... lol

We had beef tacos for dinner tonight. Little Miss loves tacos so much she jumped up and down, giving me hugs when I told her what I was making (lol, silly kiddo)!
Anyways, with some of the leftover mini-corn shells, I thought it'd be great for her lunch - she was happy to hear that too.
