#UdisGlutenFree Banana Berry Crunch Muffin Recipe

I love baking muffins!
They're great for grab & go breakfasts or throwing in the lunch box for a nice change up.

One of my favorite combinations is banana & blueberries. I admit that before I stopped eating gluten, I would regularly get my Starbucks on my drive to work + a blueberry muffin. So expensive and so unhealthy... but they were so delicious! 

So making muffin recipes of my own now, that are gluten free & allergy friendly, are something I love to create and do! And Little Miss loves to help.

You know when you see a yummy recipe and you think, hmm... I'd love to make that! And tweak it! And EAT IT! Well that's how this one came to life.

The best part - No Flour! These babies are Gluten and Nut Free. They can easily be made Dairy Free too. Check it out!

Lunch Made Easy: Happy Birthday Jesus! {Reason for the Season}

As much fun as all the Santa, reindeer, and holiday music is, I really try to ensure Little Miss focuses on the {Reason for the Season}.
 
We like to celebrate on Christmas day by actually singing "Happy Birthday" to Jesus. So, I thought it'd be nice change up to pay a little lunchtime homage to the man upstairs.

Food for Thought: SunButter & Banana Muffins with Cream Cheese & Grape Jelly Glaze (GF, NF)

One of the things Little Miss and I enjoy doing most on the weekends is having our time in the kitchen together to bake and try new recipes. She LOVES being my lil' Sous Chef! :)

This one is already a big hit with her, and I enjoyed one this morning with a cup of coffee. It tasted like I was eating a sinfully delicious pastry or donut, but instead it's packed with protein and Vitamin E from the SunButter along with the yumminess of bananas which are heart-healthy and a great source of potassium. They're also gluten and nut free, of course!

Since I got home at a decent hour today, I made lunches earlier in the evening. I let Little Miss pick out everything she wanted in her lunch. I think she did a pretty good job! :)
