Lunch Made Easy: Leftovers for the Lunch Box

Little Miss has picture day tomorrow at school! Yay!

I had *planned* on making her a Picture Day themed bento like I did for her school lunch last year... BUT whenever we have tacos for dinner, this little girl gets her heart set on the leftovers in her lunch box the next day. Seriously. lol

So, I gave her the choice: Picture day lunch or leftover taco meat? She chose leftovers. :)

Lunch Made Easy: Back to School - What about Mom & Dad?

We all know "Back to School" season is upon us. That means early mornings, homework, after school sports/ clubs, and packing lunches.

As parents, we are so caught up in our kids lives and focusing on them... but what about us? What about lunches for Mom and Dad too?

While you're adjusting to the new school routines, go ahead and plan for yourself. If you start at the same time as back-to-school, it won't feel like "extra" work but an every day routine.

Snackable: Frozen Yogurt Star Pops ~ Made with Fresh Fruit!

My sister bought us this fantastic Wilton star pop mold, so I thought, what a fabulous idea to use the same premise behind the frozen yogurt bites I make for Little Miss' lunches and create fresh fruit, frozen yogurt pops with it!

Lunch Made Easy: MOMables Monday - Freezer Stash

Happy July everyone! Can you believe this year is already half over? Yikes!

When I last made the GF Italian Mini Quiches for MOMables Monday, my batch yielded 24 of the quiches, so I had put half the batch into the freezer for use later.
I pulled them out yesterday and put them into the refrigerator so Little Miss could enjoy them again for lunch Monday.
Another great reason why I love have foods done and ready to go in the freezer, lunch = done!

Lunch Made Easy: Rainbow Bento

Completely not on purpose, I realized Little Miss' lunch for tomorrow has the makings for the "Today I ate a Rainbow" chart almost covered - yes!

Red = Cherub Tomatoes
Orange = Mandarin Oranges
Yellow = I always send a Banana with her to daycare/sitter for one of her snacks (not pictured)
Green = Cucumbers
Blue/Purple = Grapes

That doesn't even count the fruits/ veggies she'll have with breakfast & dinner too. :)

It was a nice evening to refer to my MOMables menu plans ~ I ran my first official 5K race this afternoon and it also happened to be the hottest day of the year (91 degrees when we finished!) so I am pooped this evening! MOMables makes it easy to find instant inspiration!

Lunch Made Easy: Simple Little Bites

I love lunches that can be put together quickly but also offer Little Miss lots of simple little bites of different things. Makes for a fun lunch. :)


In the blue flower silicon cup is from a leftover SunButter & jelly sandwich on gluten free, peanut free bread. Instead of wasting it, I cut it up into small bites.
Around it are red seedless grapes.

On the other side of this LunchBots Duo container is a small silicon clover cups of flower cut cheese bites. Beside it are freeze dried mangos.

There are also carrot sticks and a mini banana chocolate chip gluten-free muffin.

Lunch Made Easy: Cauliflower Crust Lunchbox Pizza (with recipe)

Pizza is a favorite of Little Miss (and me too)! One reason since going gluten-free, I've been enjoying finding and making her fun alternatives to the "traditional crust" (such as the Chebe pizza muffins I made previously).

There are endless cauliflower crust recipes out there, most are very similar but with a twist on the seasonings and toppings used.
Here's my version which yields two crusts that fit perfectly inside this EasyLunchboxes container:
