{Enjoy Life Foods Friday} Plentils Lunchbox Fun #GlutenFree #AllergyFriendly

I love our Enjoy Life Foods Friday posts. Seriously.
The challenge each month of creating fun foods & recipe ideas with their products that are great for lunch & snacks is something I love to do.

Enjoy Life is such a staple brand for any food allergy family. No questions - you know that it's going to be top 8 allergen free, gluten free, non-GMO, and contain no artificial junk

The first post we did last year was using Enjoy Life Foods Plentils. They are the "chip with benefits" made from lentils and protein packed.

The post was so successful, they asked me use them again in this months post! So, welcome to PART II with Plentils

Lunch Made Easy: BBQ Pulled Pork Leftovers {+ #Recipe}

A few weeks ago, I put out a teaser on Facebook for our newsletter subscribers. They received this special lunch idea & recipe before it hit the blog!

Our newsletter is biweekly, so don't worry, I won't flood your email with annoying messages. Be sure to sign-up so you don't miss out on other special "subscriber only firsts"!

I love finding yummy ways to use up leftovers. As my Chief Mom Laura Fuentes at MOMables has taught me, "cook once and eat twice".

Our Crockpot BBQ Pulled Pork recipe is one that is in my normal dinner rotation. It's simple and quick to put together in the morning before we leave for work & school. There's nothing better than walking in the door to dinner being complete.

So, what do we do with the leftovers besides serving it on another gluten free hamburger bun?

Lunch Made Easy: Taco Leftovers = Nachos for School!

I've said it before, "taco night" is probably Little Miss' favorite thing in the world. She and the fella have "taco races" to see who can eat the most.

I can say proudly that my daughter... WON last night! LOL
Girl ate FOUR tacos to his three. She was quite proud of herself! ;)

I thought she might be "taco'd out" after that but I asked if she wanted the perfect amount of remaining taco meat for school lunch today so she could make nachos. Without hesitation I received an emphatic "YES PLEASE!" in reply.

I love repurposing leftovers for lunch:

Lunch Made Easy: Leftovers for the Lunch Box

Little Miss has picture day tomorrow at school! Yay!

I had *planned* on making her a Picture Day themed bento like I did for her school lunch last year... BUT whenever we have tacos for dinner, this little girl gets her heart set on the leftovers in her lunch box the next day. Seriously. lol

So, I gave her the choice: Picture day lunch or leftover taco meat? She chose leftovers. :)

Lunch Made Easy: Tacos for Her, Nachos for Me!

Taco night is always a hit at our house, especially to Little Miss. She would have them twice a week if she could, lol...

I love taco night because that means leftovers for the easylunchboxes the next day!
Lunch = done.

There was *actually* enough left this time (I knowingly bought a little more ground beef than typical) for us both to have it in our lunches. Woo!
