Lunch Made Easy: GF Cauliflower Crunch Salad for Work

Over the past few years, I've shared various lunches and round-up posts of the foods I pack for myself for work.

Being a mom and working full-time is a challenge and an adventure! Quite often, we focus so much on our kids foods we forget about ourselves and don't make the effort to pack ourselves a balanced meal to get us through our work day.

One of my favorite things to pack? Cold pasta salads. Great for using up leftover pasta from dinner the night before. 
This particular recipe I started making as a teenager: Cauliflower Crunch Salad. 


As I mentioned above, one of my favorite things to pack are cold pasta salads... well, that and leftovers... so this encompasses both! 

I had leftover gluten free pasta from dinner. Knowing that this recipe is best after being chilled, I went ahead and prepped it while I was cleaning the kitchen at night. (Why make more messes in the morning!? Plus, it saves me time when we're scurrying out the door to pack Little Miss and my lunches at night. This way, too, I can clean it all up at once.)

Gluten Free pastas are notorious for getting hard overnight in the fridge. I've found different brands to work better than others and they stay moist when they're kept moist. So by prepping this, again, at night I know that it keeps perfect for lunch the next day. In this particular case, I used Ronzoni's New Gluten Free Pasta. Worked perfectly.

Aside from my pasta salad, I also have packed fresh berries and two turkey roll-ups in an EasyLunchboxes container. 

So, what's in the Cauliflower Crunch Salad besides leftover pasta, and the obvious... Cauliflower...?
