Lunch Made Easy: One Box, Five Lunches with @Chebe_Bread

Over the years, I've shared various lunch ideas and recipes using Chebe dry mixes. 

I love the AP Bread Mix, especially. It's versatile, inexpensive, gluten free, & allergy friendly

Last May, I did my first "One Box, Five Lunches" post using the mix. It's been such a hit, I thought I would do it again- with some new ideas!

The thing I love most about these ideas, you have the ability to bake once and have lunches done/ packed for the entire week! Who doesn't love prepping ahead and having lunch ready in the fridge every morning ready to go!? I know my tired eyes do. ;) 


I start by making my bread mix, per the box instructions. Adding cheese to the mix is optional, so depending on what items you intend to make (see my previous post HERE for additional ideas) you can opt to add in or leave out. We left it out this time and also used non-dairy milk to complete the recipe instructions.

I then divide my dough out into five equal parts, knowing that I need five days worth of lunches. That way, they're portioned correctly. 


For the hot dog bun, pictured above, I flattened the dough out by hand and then shaped it into the bun by curling up the sides. 

Here I've packed it in an EasyLunchboxes container with carrot coins and melon balls. 


Much like the hot dog bun, I made these slider bread buns by again flattening out the dough. I then used a circle cutter to get them all shaped and sized equally. 

You can fill them whatever you want - I think these will be great in the summer for little burgers. Yum! They actually look like "little McMuffin sandwiches" in the photo, but it's a mini salami sandwich. One of Little Miss' favorites. 


We complete our lunch box with carrot sticks and apple slices. I'm always asked how I keep the apples from browning - I soak my slices in apple juice for a few minutes before patting dry and packing. This way it doesn't change the flavor. 


The last post, one of Little Miss' favorites was the cream cheese, chicken, & spinach balls. This time, I instead stuffed it with cheese shreds (use regular or non-dairy) and a little bit of garlic so it would be a yummy cheese garlic roll to go along with the salad.

The salad is topped with broccoli, cauliflower, and carrots. Packed with melon balls and meat slices in an EasyLunchboxes container. 



Little Miss loves "Breakfast for Lunch". One thing she misses though, since going gluten free, are cinnamon rolls. I thought it'd be a wonderful treat to make some with the mix!

And oh boy, do they smell heavenly! I flatted the dough out in a rectangular shape by hand. In a small bowl, I mixed together some melted butter, cinnamon, and brown sugar and then spread it out ontop of the dough. 

I then sliced it into six equal parts and prepped it for baking (along with the above Chebe lunch items) on a parchment lined baking sheet.


For the lunch box itself, we also have cauliflower, strawberry organic yogurt, and a banana.

Simple and delicious. A nice change up for the typical lunch, as well.


We always make a pizza inspired item with the mix. Whether it's a pizza crust or pizza muffins. This time around, we made a pizza pocket. 

Super simple. Just roll out the dough, fill one side with sauce, cheese, and toppings of choice. Fold over other side and pinch seams together by hand or with a fork. Then bake!

We finished off our EasyLunchboxes container with a side salad and apple slices.

  2. Are you using egg replacer? I tried flax eggs and found it so dry that I nearly doubled my liquid. Any suggestions?

    1. Hi Tonya! Yes, I have made them with flax eggs before. It will require more liquid AND I recommend a bit extra cheese, as well - as that will also help bind. Depending what you're making, I find adding some applesauce in lieu of eggs also works well. Hope that helps!

  3. How do you keep the bread from becoming rock hard? I've tried baking my kid this wonderful bread for the week and unless it was reheated, which can't be done at school, it was hard enough to hammer nails. (By day to let alone day 5) These look so delicious, so creative, if only I could crack this mystery!
