Lunch Made Easy: Sausage and Rice + GF PF Muddy Buddy (with recipe)

*Whew* LONG day! Thus my late lunch posting.
Busy busy followed by parent-teacher conferences this evening (always entertaining to hear about Little Miss and read her class journal).   :)

Little Miss has leftover gluten-free brown rice with chicken apple sausage slices on top. I cut the sausage into flower shapes using my veggie cutter, just to make it a little more fun.
Right side there is a silicon flower cup with celery sticks and colby jack cheese slices.
A cutie mandarin orange on the side.
There's also a handful of gluten-free and peanut-free Muddy Buddy inside our LunchBots Duo container.

I know this might sound silly, but I had never made Muddy Buddy before... before Wednesday night that is! The recipe is right on a Rice Chex box! (Not like it's a secret "How-To", lol...) I just substituted the PB for SunButter, added some honey, and used "safe" brands. (Being that I didn't need a party size amount either I cut the recipe down from what was stated for the servings sizes, as well.)


  • 2 Cups of Gluten Free Rice Chex Cereal
  • 1/2 Cup of Enjoy Life Mini Chips
  • 1/2 Cup of SunButter Creamy Spread
  • 1/2 tsp of Vanilla
  • 1 Tbsp of Butter
  • 1 tsp of Honey
  • 1/2 Cup of Powdered Sugar


Pour measured cereal into a large bowl with lid (I used a large tupperware bowl with lid). Set aside.

In a microwaveable bowl, microwave chips, SunButter, and butter uncovered for one minute.
Stir and microwave in 20 second increments until mixture can be stirred smooth. Stir in vanilla.

Pour mixture over cereal. Stir until evenly coated.
Add powdered sugar. Place lid on bowl, tightly, then shake well until coated.
(I mixed it a bit more by hand and lightly with a spoon to ensure that all the powdered sugar was fully coating the rice chex.)


Let cool. Store, with lid on, in the refrigerator.

That easy.First time Haley has ever had Muddy Buddy either - she's been LOVING on it so far! Success.

  2. I agree.... the rice and sausage looks delish. My girls would love that! I can NEVER make muddy buddy with out eating the whole thing in one sitting. Great recipe for it mama!
