Food For Thought: Crockpot Love - Beef & Bean Chili

Ya'll thought I was joking when I said I'm having  a secret love affair with my crockpot, didn't you? ;)

Today was a cooler, rainy, dark day here so a bowl of warm chili just sounded like it'd be nice this evening! Here's how I make mine...



What you'll need:

1 lb of Ground Beef
1 Can of Chili Beans (I use a medium sauce)
1 Can of Kidney Beans (I use the light red kind)
1 Can of Tomato Sauce (or paste)
1 Can of Diced Tomatoes with Green Pepper & Onion
1 Pkg of Chili Seasoning

Optional:
Onion
Cheese
Sour Cream

First, brown your ground beef in a skillet and then drain.


Next, spray your pot with Pam and then pour in the can of tomato sauce.
I then add the seasoning packet and stir it up together well.


Add your (browned & drained) ground beef next and stir again.


Then, add the can of diced tomatoes with green pepper & onion - drained.
Add the can of chili beans - undrained.
Lastly, the can of kidney beans - drained.

Stir it up. Cook on low for 6-8 hours.


I like to add cheese and a slab dollup of sour cream to mine. :)

We opt out of additional onion, because as I mentioned before we try to keep the onion breath to a minimum at our house, lol...
You can also spice it up more by using a HOT chili seasoning packet in lieu of Original. I sometimes add a few shots of hot sauce to the pot while cooking too.
Since little miss will be eating on this, the recipe as laid out above has just the right amount of spice even for the five year old. :)
