Lunch Made Easy: Happy Birthday Dr. Seuss!

Friday is Dr. Seuss' birthday! Little Miss has been so excited all week - she knew she was getting a special lunch and she has her Seuss shirt, socks, and her "Yot in the Pot" doll set out for school tomorrow. :)


I hope you can tell what I was trying to make here... lol, a birthday cake!

This was my first "theme lunch" since going gluten-free with Little Miss so oddly I felt a little nervous about it because I couldn't just go to ol' reliable loaf of white bread. haha

I made Little Miss a Gluten-Free pancake and then covered it in whipped cream cheese to look like cake icing. I then decorated it with food gel (purple) and sprinkles (spelling out SEUSS) on the cake.

The "candle" is made of strawberry and banana slices on a fun pick, to look like the Cat in the Hat's hat.
There are three starfruit pieces to represent the Sneetches. Two red gummy fish for One First, Two Fish.

Top left is a deviled egg. I colored it green with just one drop of food coloring added, to represent Green Eggs and Ham. It's laying on a bed of red cabbage and carrots.

Top right is orange and purple cauliflower, which reminded me of the truffula trees from the Lorax.

Lunch is packed inside an EasyLunchBoxes container.

It's so funny because I really wanted Little Miss to be involved and tell me what characters or parts from the books she wanted me to include. This is what she gave me this morning:


Then proceeded to open these books and more, pointing at 104890184382403 different things and saying "I want that... and that... and this... ooh and make this... oh and that too!" LOL I love her imagination but it makes me chuckle at the things she thinks her Mama is capable of... or that there's THAT much room in her lunchbox. ;)

So you know how my process goes - I take what she wrote and then told me, then try to sketch some ideas when it's something THIS detailed. (I do NOT do this every day, LOL!)

 

And well, I ran out of room for even about five other things I wanted but you improvise and do with what you have/ can. :) All in all, I'm happy how it turned out and I know she'll LOVE it!

  4. Keeley, I absolutely love your blog and your bentos! You make mine look terrible! I wanted to ask you, since you have switched your daughter to a gluten free diet, have you noticed a change yet? We are having some stomach issues with my son lately and was thinking about trying out a gluten free diet. He has a doc appointment soon, so once we see the doc, we are making the switch whether he says it is an intolerance or not. Any advice or thoughts would be awesome!

      It's only been a week, so I hate to jump to conclusions too early BUT I will say there have been no tummy ache complaints this week and her (sorry this is hard to explain without sounding gross) #2's have been more solid and regular! So *fingers crossed* this is what she needed!!
      It obviously can't hurt to try a GF diet of you're concerned; I hope your dr's appt goes well too!
