The fella loved it so much that it's become a hit in the house and a recipe I now make on purpose! LOL
First spray your pot with cooking spray, then place your pork inside.
I used approximately 1.25 lbs of country style, bonless pork rib meat.
Next pour a 10oz jar of salsa over top. Then add 1 packet oftaco seasoning mix. (We used the HOT kind for both, because that's what the fella and I prefer.)
I then pour approximately 5 oz of chicken stock over top (just enough to cover the meat). Lightly blend all the toppings together, to ensure the seasoning packet is mixed in.
I let it cook on low for about 7 hours.
After it's done, shred the meat just as you would pulled pork.
We love this because it had the spicy kick we love, was super tender and juicy, and left us filling full but not in a greasy, over stuffed way!
(I think this pork would also be yummy on nachos! Yum!)
Make this Gluten Free by Eating it with GF Tortillas or Corn Shells!
