Lunch Made Easy: Cupcake Surprise! {Happy Birthday Little Miss}

I can't believe my baby girl is ten years old today.
People have said since the day she was born, cherish each moment... they go by quick! Man, they weren't kidding. How did ten years happen so fast?
I remember her learning to crawl, learning to spell her name, mispronouncing words, her first day of school, her first lost tooth... and now she's ten?! 

Excuse me while I curl up at my desk and cry.

When Little Miss' birthday falls during the school week, I always try to make her a special breakfast and/or lunch to celebrate. Today, I packed her a fun cupcake surprise! 


Happy Birthday to my baby girl!





Little Miss' sandwich was made using Schar Gluten Free's new Artisan Baker Multi-Grain Bread. It's not only lactose and gluten free, but also made without eggs and milk. 

I trimmed down the bottom and placed it inside a cupcake liner to make it look like an actual cupcake sandwich. The candles are food picks given to me by a fellow blogger/ friend. I believe the were originally purchased from a cake decorating store.

Also packed are carrots and apple dices, and two Udi's Gluten Free Soft & Chewy Chocolate Chip Cookies. These cookies are 1) delicious and 2) gluten, soy, and nut free.

On the top are Snikiddy Snacks Eat Your Vegetables Sea Salt chips (they're her favorite!). They're non-gmo, contain 8 yummy vegetables (but your kids won't be able to tell!), are nut & gluten free, and the Sea Salt variety are Vegan. 

On top of them are two cheese bite cupcake cutouts.
Lunch is packed in a Planetbox Rover.

  1. I'm so glad to have found your blog. Both my kids have almost separate food allergies with my older one having wheat egg and milk while my younger one has soy egg spinach celery squashes peanut almond fish shellfish allergies...just seeing your blog's about gluten egg soy and milk free baking excites me. I've having successfully make a cake for my sons yet ..all the pancakes cake brownies I did was all of the same ingredients and just either less liquid and thus dryer...I'm excited to try your cakes sandwich thins etc as my son is going to kindergarten now and he's not eating much of his food in thermos as he used to..I'm trying to be more creative with his lunchbox so he is more interested in eating..he's always been a picky eater and still being fed at home...
