{Enjoy Life Foods Friday} Crunchy Cookies Lunch Box Fun #GlutenFree #AllergyFriendly

Welcome to this month's edition of Enjoy Life Foods FridayFor May we're featuring the crispy, crunchy, and completely delicious Crunchy Cookies

The cookies are gluten free, top 8 allergen free, Non-GMO, and feature all-natural ingredients. They're available in four yummy varieties: Chocolate Chip, Vanilla Honey Graham, Sugar Crisp, and Double Chocolate.

Coming up with creative (and somewhat healthy...ish) ways to use them for lunches or snacks, welllllll, that could be a little tricky. Thankfully, Little Miss and I were able to put our thinking caps on and got to work! I'd say we did a pretty tasty job. ;)


Naturally, all good things begin with CHOCOLATE. Double Chocolate to be exact. 

What if I told you you could make a yummy pudding using only three items, have it be gluten & top 8 free, ready in minutes, and it could packed for lunches too? 


Done.
The ingredients? Two medium size ripen Bananas, One box of Double Chocolate Crunchy Cookies, and 1 Tablespoon of Honey. That's it.

Mash the bananas, pulse the cookies in a food processor or blender, add the honey, mix them all together, and enjoy!

Let's take this one step further... 
What if you could turn that same pudding into something delicious & baked too?


Yup. We did that. And these little guys need no forks. You can pick them up and eat them! Mmm, chocolate pudding cups...

Just spoon the pudding mixture into a greased silicone muffin pan (about 3/4 full), bake at 350 degrees for approximately 20-25 minutes and let cool in the pan. Store in the refrigerator or freeze for later use. (Printable recipe is located at the bottom of this post.)

A great dessert for the lunch box or treat! 


So, funny story... When I get my items from Enjoy Life they want me to use it's months in advance. That way I have time to plan, come up with ideas, create, test recipes, etc.

Needless to say, this Sugar Crisp Fruit Pizza idea has been in the mental works for quite a while. Much to my surprise, my girl Chef Corey of FamilyFreshMeals must've been reading my mind because she shared an adorable version of her own just the other day using homemade sugar cookies.

Our version features Enjoy Life's Sugar Crisp cookies. I topped them with dairy-free cream cheese, or you could use the regular kind depending on your allergen needs, and dices of fruit. 


They make a great addition to the lunch box or could even be made as a special class treat for parties or special events. 

One of the biggest questions/ comments I get are people searching for lunch ideas that are either non-sandwich or utilize something other than bread. 

I love using pancakes and waffles for lunch instead of slices of bread!


Using the Chocolate Chip Crunchy Cookies, we created these droolworthy gluten & top 8 free Chocolate Chip Cookie Waffles! 

They're simple to make (recipe is located at the bottom of this post) and there's something magically that happens to the cookie crumbles in the batter once cooked in the waffle iron - The waffles take on a cake/cookie-dough like texture that's divine to bite into.


Serve them up with your favorite nut free spread and strawberry slices in the middle for a new and improved kind of sandwich!

Better yet... at night, after the kids go to bed *wink wink*, scoop a big ol' pile of ice cream on top and enjoy! ;) 


Since campfire season is upon us, I had to reshare my absolute favorite way to use the Vanilla Honey Graham Cookies... for S'mores!

Use a piece of Boom Choco Boom bar in the center for allergy free chocolate heaven!
