When I saw this Pumpkin Pancakes post on MOMables last week by Chef Corey, I knew Little Miss would LOVE them! 
We of course made ours {Allergy Friendly} and added some yummy chocolate chips!
To make our pancakes, we used our King Arthur Flour Gluten Free Pancake Mix which is made in {Top 8 Allergen Free} facility. 
We use coconut milk to keep it {dairy free}, but still used an egg, as called for in the recipe, but it could be replaced by your prefered substitute to keep them {egg free}. 
We also added Enjoy Life Mini Chocolate Chips to the batter, which are also {Top 8 Allergen Free}. By adding chocolate chips to Little Miss' pancakes, she eats them without syrup.
By using our pancake mix, we omitted the baking powder and added a teaspoon of vanilla extract. I also added an additional teaspoon of ground cinnamon to the recipe on MOMables. 
Little Miss also has a pumpkin silicone cup of peach dices and a mini sweet pepper pumpkin (thank you Happy Little Bento for the tutorial). 
Her pepper pumpkin is on a bed of broccoli slaw.


Love the mini pepper pumpkin! And thanks for reminding me about pancakes for lunch. Lentil soup is simmering now, but pancakes next up :)
