Apple SunButter Baked Oat Bars {Gluten Free & Allergy Friendly}

There are some items I am admittedly addicted to...
Crunchy Chips
Pickles
(Handfuls of) Enjoy Life Chocolate Chips
Coffee
... and SunButter mixed with Apple Butter.

I eat SunButter & apple butter on gluten free toast almost regularly. I even make it into a quesadilla for lunches! When it's warmed, it's soooo ooey-gooey delicious. Seriously. 

Not a fan of apple butter? That's okay. You can make this recipe with any of your favorite jams or jellies. Heck, Little Miss thought it would be amazing with SunButter and chocolate chips even. She's right - but as you read above, I like to eat handfuls of them... every night... so we were out. Oops. ;) *add more to grocery list, again*


These bars are soft and not overly sweet, as made. They're also gluten free and allergy friendly! Technically, they are top 8 free... I am often asked about SunButter's allergen warning. They do state a soy warning on their products, but you can read their statement HERE on their cleaning process and decide for yourself, based on your comfort level, if it is safe for your family.  


The oat mixture is gluten free all-purpose flour, gluten free certified oats, brown sugar, and dairy-free butter. That's it. So simple!

Again, check and use the products that best fit your family. You can use regular flour & butter if you don't need gluten or dairy free so don't let that stop you from trying this out! I love King Arthur Flour's GF All-Purpose Flour because it also top 8 allergen free. We also use Earth Balance Baking Sticks for our "butter". 

Mix the dry ingredients, cube the butter, and cut it into the oat mix like you would when making a pie crust. Make sure it's fully incorporated.


Then, let the layering begin! Half the oat mixture pressed firmly down into the baking dish.. layer of apple butter... layer of SunButter (we used the new No Sugar Added variety), then top it with the rest of the oat mix. BOOM! Ready for some lovin' in the oven! 

Use your favorite store bought or try our Slow Cooker Pumpkin Apple Butter recipe. As mentioned above, you could also use your preferred jelly or jam on hand - like grape, strawberry, blackberry, or just add some chocolate in there. ;)



After they are done baking, make sure to let them cool completely before slicing. Depending how big or small you want them, I cut ours into a 3x3 grid so we had nine bars to enjoy!


Seriously. SO GOOD.
