{Semi} Homemade Moon Pies #GlutenFree #AllergyFriendly

When's the last time you had a Moon Pie? 
The delicious treat typically consists of two graham crackers cookies, marshmallow filling, and dipped in chocolate.

It wasn't until planning my sister's baby shower, I realized Little Miss had never had one before - since the store bought variety has allergen warnings and they're definitely not gluten free.

That needed to be rectified... so we made some ourselves! Gluten Free & Allergy Friendly, of course. ;)





As I mentioned, it was while planning my sister's baby shower that the idea came about. 

Her theme was "Twinkle Twinkle Little Star". I spent months working on the details and planning for the party; She and my brother-in-law have been through so much and it was a long journey to parenthood, so I wanted to make sure every detail was special.



It was while filling the goodie bags for guests, in keeping with our "star theme" I was including Mini Moon Pies as one of the treats inside, Little Miss wondered what a Moon Pie even was and if she could have one.

Of course, I told her we'd make some... though at that moment, I had no clue how I was going to go about that. Then it hit me! 



Use our Enjoy Life Foods Vanilla Honey Graham Cookies! They're gluten free, top 8 allergen free. I already knew they made delicious s'mores, so why not Moon Pies?! 

Since Little Miss can have eggs, I love using MOMables Homemade Fluff recipe. If you can tolerate the store bought kind, that works too (and saves you even more time to whip these up - woohoo!). For those with egg allergies, try Vegan Ricemellow creme

ETA: Many have commented that just warming/ melting some regular ol' marshmallows between the cookies works great too! Like a s'more. ;) 



For the chocolate, we used Enjoy Life Foods new Dark Chocolate Morsels to give it the same richness as the classic pies. Melt them with a little oil (we use coconut oil) and dip!

Fully submerged, dip both the top & bottom of your cookie pies. Let set (or cheat and pop them into the freezer if you're impatient... like me). You'll actually need to dip them TWICE - After the first coat hardens, dip again, to ensure they're fully coated with a nice thick shell.

That's why a second coat, after the first one hardens, is futile... and delicious.

Once the cookie chocolate shell has hardened, after the second coat, I trimmed off any excess chocolate (since I'm a sloppy dunker) so I had a nice round Moon Pie to serve.



To say Little Miss enjoyed these would be an understatement. They were gone almost immediately. 

They were so easy to make and knowing that they were safe for her allergies/ dietary needs made it all the more fun to enjoy!
