Lunch Made Easy: Mommy + Me Gluten Free Work & School Lunch Ideas

I love when I can keep things simple by packing the same foods for Little Miss and me for our lunches for work & school (or now that it's summer - daycare, camp, or just to enjoy at home)! 

One great way to mix it up from the traditional sandwich bread is to use waffles. A quick go-to solution are Van's Natural Foods gluten free waffles. They're also egg & dairy free, and made in a tree nut & peanut free facility.

Here we've made them into a yummy lunch idea using egg, guacamole, and deli meat. Check it out!


For Little Miss, she loves anything when packed on a stick. So I cut up her waffle and using a fun food pick, I placed the food in layers like a "sandwich on a stick".

She also had carrot coins, a hard boiled egg, and strawberry dices packed in her EasyLunchboxes container. 


Using the same ingredients, I packed my lunch by using the waffles as a sandwich. I diced up the hard boiled egg and placed them into the sandwich along with my guacamole and ham slices. 

On the side, I have strawberries and carrots- just like Little Miss - in my own EasyLunchboxes container.

  1. These are great ideas! Thanks for sharing. We are not gluten free but I have to eat low carb and a lot of GF recipes are naturally lowcarb so it helps!
