Lunch Made Easy: Mini Corndog Muffins {Gluten Free & Allergy Friendly}

Mini Corndog Muffins is something Little Miss and I love making. They're great little finger food items for appetizers, party snacks, and even packed up for school lunches.

Corndog... Corn Dogs... however you spell it, the fact remains the same, they're a fun food for kids! (And let's be honest, adults too.)

I shared our gluten free & allergy friendly recipe for them about a year ago, along with a lunch post on using leftovers

They're simple, quick, easy to make. They only take 15 minutes to prep & bake! Best of all, they freeze great so you can make them ahead for lunches or meals in the future.

They are gluten free & allergy friendly - dairy free, egg free, nut free, soy free as written. We use Hodgson Mills Gluten Free Cornbread Mix - the gluten free mixes are made on dedicated lines and the facility is peanut & tree nut free

This time, instead of using the 1/4 cup of applesauce called for in my recipe, I actually used half unsweetened applesauce and half apple butter. Why? Just for an added layer of sweetness and flavor. It also added a bit more color to the batter, as well.

Little Miss said that little extra was noticeable and she loved it! I actually had to stop her from eating them all so we'd have some for lunch and freezer! Little food thief. Every time I turned my back, she'd sneak another one. lol 


For lunch, she has grapes, organic baby carrots, and a Mini Dipper with a little bit of organic ketchup for dipping her Corndog Muffins. Lunch is packed in an EasyLunchboxes container.

  4. These are so super cute, I think the little corn dogs would make great party food since they're bite sized and can be made ahead of time.

  5. When my kids were eating hot dogs (they refuse now), they LOVED these! I think I'll try them again this summer and see if they're over their No-Hotdog-Phase!
