Lunch Made Easy: BBQ Pulled Pork Leftovers {+ #Recipe}

A few weeks ago, I put out a teaser on Facebook for our newsletter subscribers. They received this special lunch idea & recipe before it hit the blog!

I love finding yummy ways to use up leftovers. As my Chief Mom Laura Fuentes at MOMables has taught me, "cook once and eat twice".

Our Crockpot BBQ Pulled Pork recipe is one that is in my normal dinner rotation. It's simple and quick to put together in the morning before we leave for work & school. There's nothing better than walking in the door to dinner being complete.

So, what do we do with the leftovers besides serving it on another gluten free hamburger bun?


One of Little Miss' favorite ways to eat leftover pulled pork is on nachos


Here I packed her gluten free tortilla chips with a silicone jumbo cup of leftover pork topped with cheese. When I make this for myself, I sub for my non-dairy cheese shreds - just a delicious!

Little Miss does have access to a microwave in her classroom so she can heat up her cup of pork. If you're worried about keeping it warm, send it in a thermos instead. 

I packed along side it watermelon and fresh corn off the cob inside an EasyLunchboxes container.


For myself, I made these delicious gluten free & allergy friendly cornbread sliders! 

Bake up the cornbread muffins to have with dinner and serve up leftovers at lunch or if meal planning, you could even prep them ahead over the weekend to go with multiple meals during the week. 

I love the small sliders! It was the perfect portion and a delicious way to enjoy these yummy leftovers. I packed mine with a side salad and fresh corn off the cob in an EasyLunchboxes container.
