The past week and a half, we've been eating on and loving our new Allergy Friendly Udi's Gluten, Nut, Dairy, & Soy Free Tortillas.
I know that our 20 Non-Sandwich Lunch Ideas post has been such a hit, with people trying to break away from the traditional sandwich and those with picky eaters, so I thought it'd be great to compile a post with some yummy ideas we've done using tortillas and wraps.
For me personally, I've been finding great success since going completely gluten & dairy free + trying to maintain a low protein diet. It's helping with my medication side effects and also my neurological issues, stemming from Myasthenia Gravis (an autoimmune disease I suffer from).
Here I packed myself a delish Black Bean Quesadilla! Using my GoVeggie Mexican non-dairy Cheese Shreds, organic black beans, and an Udi's tortilla. It took only minutes to prepare. Add a side dish of salsa for dipping and/or spreading onto the quesadilla + yummy fruit and veggie sides.
One thing that Little Miss never grows tired of is Bananas, Honey, & SunButter ~ yum! Whether on crackers, a sandwich, or by itself.
Here I made her these "sushi" roll-ups by spreading SunButter nut free sunflower seed spread over the entire tortilla. I then drizzled honey and added a peeled banana. Next I rolled it up and sliced it, for a fun new lunch idea!
If you're worried about your banana slices browning, add a tiny bit of lime or lemon juice on the sliced area. It will help it maintain its color until lunch.
This lunch was by far Little Miss' favorite using our Udi's tortillas. Using our waffle maker, we added a tortilla, sauce, mozzarella cheese, and pepperoni slices then another tortilla on top. I let it "grill" for a couple minutes until the cheese was nice and melty.
A simple and easy way to make a quesadilla or in this case... as Pizzadilla!

Probably one of the most popular ways to use a tortilla for lunch is to use it in lieu of bread for a sandwich.
Here I made Little Miss turkey & cheese pinwheels, by filling the tortilla and then slicing it for bite size sandwiches in her EasyLunchboxes container.
We also packed her a leftover SunButter & Chocolate Cake Pop, spinach side salad, and fruit.
Another big hit? These Baked Tortilla Mini Breakfast Cups!
Who doesn't love Breakfast for Lunch!? :)
Here's how:
- Preheat oven to 350 degrees. Spray mini muffin tin with cooking spray.
- Warm tortilla in the microwave for about 10 seconds so it's pliable.
- Cut the tortillas into small squares. Depending on which size tortilla you use will determine how many squares you can get out of each one. The small ones should yield 4 - which is what this recipe is based on.
- Slice salami (or ham) into the same size squares as the tortilla bases. Scraps? Don't worry. Salami doesn't go to waste! Click here for ideas how to use that up!
- Put tortilla square into the muffin tin, gently pushing down and shaping until a small cup is formed. Then repeat with the salami inside the tortilla.
- Beat one large in a small bowl then evenly pour in the center of each 'cup'.
- Top with cheese and bake for about 12-15 minutes.
- Remove from oven & enjoy!

DeleteYou are absolutely amazing!! But as a filltime nursing student and working mom, how much time do you spend preparing these lunches? I feel like there just isnt enough hours to get all this done!! Do you make the night before or day of? Thanks!!! :)

DeleteSecondly, I completely understand. I work full time, on top of being Mama and all the duties that come with that role (& caring for our household).
I typically pack lunches the night before. (I say typically because there is the occasional time where I scramble the morning of - probably once a month, HAHA!)
Really, it's become routine now. Because of her food allergy & intolerance, I *have* to pack her lunch daily. It's become so second nature now that I just set aside 10-15 minutes a night to hammer it out. Once you get into a flow/ routine, it won't seem like such a daunting task anymore. :)
Oh my!!! I am so excited about your school lunch ideas. my kids are so tired of either pbj or turkey sandwiches and a bag of chips. I hate those options bc they are not healthy. my question is where do you get the little animal forks, or dressing bear holder, etc. all those accessories help. also, my 6th grade football son would be less than impressed with these cute lunches but my 9 yr old daughter and preschooler age will love them. any ideas for healthy lunches for the older boy?

I totally understand he has to look cool at that age ;) you can use a lot of the same ingredients or main dishes we feature but he'd probably prefer no cute picks or flower cup containers, I'm sure. :)
DeleteTry making neutella quesadilla it is beyond good!! Just heat up a skillet with some olive oil, crisp up your tortilla, spread some neutella or hazelnut spread then fold it in half:) yumm
