Food for Thought: Cajun Spiced White Fish with Brown Rice

I was soooo excited to try this recipe out over the weekend. It was light and delicious! One this Mama would love to eat over and over again!

This is my version of the deliciousness!


Ingredients:
  • 1 tsp olive oil
  • 4 (6 oz) pieces white fish fillets (any white fish such as tilapia or flounder)
  • 3/4 cup onion, chopped
  • 1 14.5 oz can of basil, oregano, & garlic seasoned diced tomatoes
  • 3/4 cup diced bell pepper (I used an orange pepper for some sweetness)
  • 1 tbsp Cajun spice seasoning

In a skillet on your stovetop, cook the onion and diced peppers in olive oil on medium heat for a few minutes, until soft. Stir in can of diced tomatoes (undrained) and cook for an additional 2-3 minutes. Stir occasionally during that timeframe.

Lay fillets in the sauce and cover with lid. Cook on medium-low for 12-15 minutes, until fish is flaky.

Serve with brown rice and spoon sauce over fish.


This dish had just the right amount of spice and the orange peppers gave it just a hint of sweet!
It was so delicious with the brown rice. Very light! A wonderful dinner!
