Our stores typically will sell the family size packs of drumsticks for 99 cents/ lb. I will then break up the pack into about 3-4 freezer bags, each containing 4-5 drumsticks (depending on how much I buy).
So for $4-5 I can get 3-4 meals out of the chicken! EXCELLENT.
Here's what you need: (this size feeds 2 people)
Besides the chicken, as mentioned above ;)
Seasonings (of choice)
2 Potatoes
1 Large Carrot
I first spray my pot with cooking spray and then dice up the potatoes and carrot.
Put the potatoes and carrot in the bottom of the pot. I will typically toss them with some seasoning salt and garlic & herb seasonings.
Before putting the chicken in the pot, I'll coat it with either a montreal chicken or italian herb seasoning. Both delish!
Just set the chicken in the pot. The potatoes and carrot act as a bedding for them to cook. No need to add broth or water, the juice from the chicken alone will keep it moist.
Cook on low for 6-8 hours. It's just that simple.
Fall off the bone, delicious (and inexpensive) chicken + potatoes and carrots on the side! Win, win (win)!
