Food for Thought: Crock Pot Love - Cheesy Potato Soup

So, as I mentioned in an earlier posting (http://keeleymcguire.blogspot.com/search/label/Meatloaf) I have a secret love affair with my Crock Pot, lol :)

One of my other favorite things to make in it is Cheesy Potato Soup. Mmm, mmmmmm!





What you'll need:
Well a crock pot/ slow cooker for starters :)
(1) 32oz bag of southern style potatoes - thawed
1/2 an onion, diced
1 cup of water
1 cup of milk (not pictured)
(1) 32oz carton of chicken broth
3 tbps of Flour
(1) 8oz bag of cheddar shredded cheese

Optional:
Diced celery
Real bacon bits (for the end)
Chives or Green Onion (for the end)


I always spray my pot with Pam first.

Pour in the potatoes, chicken broth, and diced onion.
This is also when you can add the diced celery, if you'd like.

I have a littler crockpot so I typically only use about 3/4 of the bag of potatoes and 3/4 of the carton of broth noted.

Cook on low for 6-8 hours.


In a small bowl, mix together the flour and milk. Wisk until blended and then add to the pot and stir.
Put temperature to high and let thicken for 20-30 minutes.
It will look cloudy like shown in the picture.


After the 20-30 minute period, soup should be getting thicker.
Return temperature to a low setting. Add the bag of cheddar shredded cheese and stir into the pot.
I tend to like mine really cheesy so sometimes add extra above the 8oz, hehe! :)

Let cook an additional 20 minutes. Cheese will melt & soup will continue to thicken.
 



TA-DA! Mmm... so yummy!
I like to add the optional real bacon bits and chives to mine.

It's even a hit with my five year old. :)
