Lunch Made Easy: Back to School Bus!

I was honored to be interviewed for the article and share a few personal experiences dealing with food allergies at school for my Little Miss.

While checking out the issue, there was a snippet inside for Family Fun Magazine and their Treat of the Month which happened to be a fun school bus lunch for back-to-school called "Miles of Smiles". I couldn't think of a more fun way to celebrate Little Miss' first full day of the new school year than with an extra special school bento lunch!


We changed up our version of the bus ever so slightly and packed it along side some of Little Miss' favorite sides in an EasyLunchboxes container


The magazine feature of the lunch uses a tomato for the stop sign, where as I utilized the fun stop sign pick we already had on hand.

I filled Little Miss' gluten free & allergy friendly sandwich with SunButter and jelly. The SunButter also makes a good "glue" to help hold all the details together!

The olive wheels are held with flat toothpicks onto the sandwich so they don't "roll away". ;)


We made it using Udi's gluten, nut, dairy, & soy free bread. She also has packed carrot coins and watermelon balls. 

I colored a slice of provolone style cheese (use regular or Daiya brand, depending on your allergen needs) with a food safe marker to make it yellow and utilized the scraps for the lights/ eyes and grill. A grape tomato makes the red lights at the top and a piece of scrap crust for the front bumper.
