{Enjoy Life Foods Friday} Soft Baked Cookie Treats for Your Sweet!

After taking the month of December off to enjoy the busy holiday season, we're back with {Enjoy Life Foods Friday}!

This month, we're featuring Enjoy Life Foods Soft Baked Cookies. Since Valentine's Day is just weeks away, I thought it'd be a great idea to explore fun ways to transform these cookies into "Treats for Your Sweet"!

Whether they're packed up for school and work lunches, made for a class treat, or just enjoyed for dessert at home, these delicious ideas are sure to be a hit for your gluten free & allergy friendly family!


Little Miss actually discovered a couple years ago that she could take our mini cutters to Enjoy Life Foods Soft Baked Cookies and create little cut-out cookies instantly! We used the Double Chocolate Brownie, but this works with any of the flavors.

Use any shape mini cutter you want, but for Valentine's Day we chose our mini heart shapes. You can serve them up as is, add a little dairy free frosting, and even some colored sprinkles for some festive fun!


Shaped allergy free cookies. Instantly. What can be better than that!?

Because these cookies are soft, you can also flatten them out to fit perfectly inside a muffin tin. We used the Soft Baked Snickerdoodle variety, but any will work perfect!


I decided to bake them up with dairy & egg free ingredients to create these allergy friendly cheesecake cups! We used Tofutti brand non-dairy cream cheese - sorry folks, it does contain soy - and an egg replacer to keep it egg free. (Printable recipe is located at the bottom of this post.)


Our last treat idea is a yummy no-bake cookie bite! Crumble up one box of cookies in a bowl then roll them up into bite size cookie balls. We used the Soft Baked Chocolate Chip variety, but any will work perfect! No need to add anything, they're soft and delicious all on their own so they'll form into balls without issue.


Next we melted Enjoy Life Foods Mini Chips with a little bit of coconut oil and dipped the cookie balls in the melted chocolate and let them cool until hardened. (Printable instructions located at the bottom of this post.)


Helloooo deliciousness! Another great treat idea for class parties, packing for lunches as a bite size dessert, or sharing at the office.


These cookies are amazing all by themselves, but it's fun to think outside the cookie jar sometimes and use them in new creatives ways. Enjoy!
