Lunch Made Easy: {Gluten & Nut Free} School Lunch Box Ideas
Happy March! I am sooo ready for Spring, aren't you??
It was another fun filled week of school lunches here for my Little Miss, which means another great round up of ideas for you!
{Gluten Free & Nut Free} and More:
We started the week simple, using up leftover gluten free pasta to make a yummy cold pasta salad for lunch: Mixed with spinach, carrot, Italian dressing & seasonings, and Parmesan cheese. {For my dairy free friends, omit the Parmesan or sub for Vegan Parm.}
Also packed is half an Udi's gluten, dairy, nut, & soy free bagel sandwich, watermelon dices, freeze dried banana chips, and two mini HomeFree allergy free cookies.
Little Miss is pretty much a "taco-aholic". Girl would eat them every night for dinner, if I'd oblige. She also loves when we pack the leftovers for lunch the next day, as we've done many times before.
Here she has leftover taco meat mixed with shredded cheese, organic corn tortilla chips, carrot sticks, and pears.
She is pretty lucky to have a microwave available at lunch so she can heat up the meat and cheese, if she wants.
Wednesday Little Miss had her favorite, SunButter! We topped it on one our new Udi's MIGHTY Bagels! These babies are packed with protein and yummy ingredients. She LOVES them! (Me too!)
We also packed her a spinach & kale side salad and watermelon dices.

Thursday's fun "Ice Cream" themed lunch box was based on this delicious sandwich idea from inspiredRD.
We made ours using Udi's gluten, nut, soy, & dairy free whole grain bread. Spread SunButter on both slices. Slice bananas and strawberries. Add Enjoy Life top 8 free chocolate chips, smoosh (this was Little Miss' favorite part), then grill it on the stove top (just like you would a grilled cheese sandwich). Yum! That makes this sammie very allergy friendly, indeed!
She also has packed two "carrot cones" topped with dip for the "ice cream". In the little cup are Utz's gluten free white cheddar "scoops of ice cream". Surrounding it are one strawberry flavored and one banana flavored marshmallow and raisins.
Tomorrow (March 2nd) is the birthday of Dr. Seuss and Read Across America Day.
Last year, we went very literally and got a little crazy with our lunch (see it by clicking HERE, lol). This year, I kept it simple by making a simple tribute to one of Little Miss' first and favorite Dr. Seuss books "The Shape of Me and Other Things".
We simply made her lunch with all kinds of fun shapes. She loved it when I showed her this morning! We packed her a hard boiled egg (whites only) circles, triangle apple bites, star cheese & lunch meats, carrot circles, and an Udi's Double Vanilla Muffin. I cut a star out of the top using this trick and put a dab of strawberry jam in the center.

I've had Udi's muffins before, but I've never seen the double vanilla flavor so I'll have to keep an eye out for those. (The store I bought mine at only had the double chocolate and lemon flavors)

DeleteThe Double Vanilla is one of their new flavors available and so good! My daughter says they taste like cake. :)
Let me know how the kids enjoy the sandwich! It was hard not to eat it right away when we made it, lol.
