HAPPY HALLOWEEN!! (Almost!)
{Allergy Friendly} School Lunch: Free from ALL the Top 8 Allergens

With Halloween fast approaching, my lunch packin' friends and I are having a Halloween Blog Hop today!

Little Miss has a spider silicone cup filled with carrot coins. To it's right is an orange flower silicone cup filled with deli meat roll-ups on two pumpkin picks.
The main compartment has a mini-dipper filled with Enjoy Life Mountain Mambo trail mix (free of the Top 8 Allergens).
Around it are slices of Chocolate Chip Pumpkin Bread.

These Chocolate Chip Pumpkin Bread Mini Loaves are so moist and delicious.
The best part? It's Allergy FREE!
Here's how to make it:
- 1 Box of Gluten Free Yellow Cake Mix {I used King Arthur Flour Gluten Free Yellow Cake Mix ~ Made in a Top 8 Free Facility}
- 1/3 Cup of Unsweetened Applesauce
- 2 TB of Oil
- 1/2 Cup of Chocolate Chips {I used Enjoy Life Mini Chips ~ Free of the Top 8 Allergens}
- 1 tsp. of Vanilla
- 1 tsp. of Ground Cinnamon
- 1 tsp. of Pumpkin Spice
- 1 15 oz. Can of Pumpkin {I used Libby's 100% Pure Pumpkin}
You can bake them in a muffin tin or bread pan, I chose to bake them in my Wilton Four Cavity Mini Loaf Pan. It's great because with mini loaves, I can easily freeze, store, or share them with friends.
- Preheat oven to 350 degrees. Spray pan with cooking spray and set aside.
- In a large bowl, combine all ingredients except the chocolate chips. Mix until a smooth batter is formed.
- Add chocolate chip and mix lightly.
- Pour batter into each cavity and bake for approximately 60 minutes. Depending on which type of pan you use, cooking times may vary. Check by sticking a toothpick in the center.
- Remove from oven. Let cool. Slice & enjoy!

DeleteIt's pretty darn delicious to boot! I shared two of the mini loaves and we already went through one. Stressing I only have one left. haha ;)
Only thing is -- it's cake, not bread. You made it with cake mix, after all. Anything with that much sugar is not bread.
ReplyDeleteFair point. The terms are used pretty loosely any more - most 'quick breads' which are sweetened with sugars are not actual breads anymore either, but still in fact called that. Take a 'out of the box' pumpkin bread mix, like pillsbury, and the sugars aren't that much more - considering this is also a GF mix and, to be honest, typically would need a bit more to offset the difference in flavor. ;)
