Food for Thought: Oreo Brownie Cupcakes

Brownies again? Yes. If you remember from my last brownie post, those were Junior Mint Brownies and I gave them to Little Miss's Daycare... lol, so these are for us to eat. :)

First start by making either your favorite homemade brownie batter or using on straight from the box.

Keeping in mind, you'll want more of a cake-like brownie mixture for these so that typically means using 3 eggs instead of 2 for your mix.

Add cooking spray and cupcake liners to your pan.

I used Oreo Mini's for my cupcakes :)

Fill your liners with a small amount of mix, just enough to cover the bottom.

I then added 3 Oreo Mini's to each cup.

Fill the cups the rest of the way with your brownie mix.

Cook as directed on your box or your usual temp.

(Mine was at 350 degrees.)

I had to sample them when they were done, ya know... to make sure they were good for everyone. ;)

Mmm, love the cookie surprise in the middle!
