When I saw this recipe posted on "Can You Stay for Dinner?" I knew I wanted to give it a try! My boyfriend is a sucker for buffalo wings and anything he can pour Frank's on, lol.
What you'll need:
Frank's Buffalo Wing Sauce
About 6oz of cooked chicked, diced
Egg Roll Wrappers (these can be found in the produce cooler section, by the tofu)
Ranch Dressing (the linked recipe call for blue cheese but I'm not a fan, so I substituted)
Brocoli Slaw (or you could dice up celery, again not a fan of)
In the center of your egg roll wrap, add add your chicken, brocoli slaw, and dressing to your liking.
Fold like an envelope. Dap your finger with water on the top seal then roll closed.
Gently spritz both sides of your egg rolls with cooking spray.
Also spray the pan. :)
The linked recipe suggest cooking them on a wire rack ontop of a cookie sheet.
I don't have one so I just cooked them right on a cookie sheet, flipping them in the middle of the cook time.
Bake at 400 degrees for about 15-20 minutes, or until they turn golden brown/ crispy.
We ate ours with some southwestern rice, a few tortillas, and Heluva Good's Santa Fe Dip (so yummy!)
