ReplyDeleteThe cucumber sandwiches look really good for a low-calorie light lunch. I might even bulk up the fruit/veggies and swap the dairy-free yogurt for a Chobani (I only need to be allergen-free if working in certain places like a nut-free school. Other than that, I don't worry about it.)
ReplyDeleteI am confused about the mayo though. Isn't mayo supposed to be a blend of egg yolks, vinegar, and oil? Why not just use regular mayo? Is it a cross-contamination issue or are companies just adding other crap into something that only requires a few ingredients (maybe 5 including salt and seasonings)? I don't eat mayo (aside from in deviled eggs- it's a texture thing, really), so I'm really clueless about this. I just figured I can trust that you, of all people, would know that eggs are not dairy (just because they are next to the milk in the produce department doesn't mean eggs have dairy...) `
These look amazing!! Such great ideas. Thank you! I find it ironic, everyone uses sunbutter to make allergy free sandwiches and I'm allergic to sunbutter (but not peanut butter lol). So happy I found your blog!!
