Lunch Made Easy: Healthy Adult Work Lunches

With the school year ending, for most families, this week seemed like a good one to focus on Healthy Adult Work Lunches. (Mom & Dad need to eat too!)

I don't just pack for Little Miss - I pack for myself, as well. Whether I'm at the office or traveling for work, it's important I have a healthy lunch to fuel me for the day!

My lunches are also now gluten free, nut free, and dairy free (& more). Here are some ideas + links to other adult work lunch round-ups I've posted to give you tons of inspiration!

I always try to incorporate some of the items I'm already preparing for Little Miss, or pack an almost similar lunch, to keep things simple and more time efficient when packing lunches.


I made Chicken Salad for Little Miss so it was simple to make sure I made enough for myself too. She likes hers plain, so I topped mine with a few golden raisins. 

You can keep you chicken salad dairy free by using original miracle whip or Veganise. I also packed mine with Ener-G brand Gourmet Crackers. The crackers are gluten, wheat, casein, dairy, egg, & nut free

Also packed are fresh strawberries, apricots, orange, and a side salad of spinach, sweet red peppers, and carrots. 


I have admittedly never like cucumbers.
Pickles, ohhhh yes. Cucumbers, not so much.

So, I took a risk this week and packed myself these mini cucumber sandwiches. Each one has ham and a bit of honey mustard. 

Guess what? I LOVED THEM. 

Also packed are baby carrots, orange, apricots, strawberries, and a So Delicious Greek Style Chocolate Yogurt. This lunch is Top 8 Allergy Free


I do pack a lot of salads... but, I love them! It's so easy to prep your toppings and base (spinach, romaine, lettuce) ahead of time so you can just grab & go!

Here I've another spinach salad with carrots & sweet red peppers. I also packed orange slices and half a sandwich. The sandwich is made on Udi's dairy, gluten, soy, & nut free Cinnamon Raisin bread and it's filled with allergy free SunButter spread. (Yum!)


I also love packed Smoothies for work. I make them over the weekend and freeze so I can grab & go in the AM. 

Here I've packed a fruit & veggie smoothie, salad, watermelon, apricots, Late July Organic brand Sweet Potato Vegan Tortilla Chips, a mini dipper of salsa (lid not pictured), and roll-ups I made using turkey, pepperoni, and pickles. (Sounds weird, right? They're delicious. I promise!)

blackberries, papaya, frozen mixed fruit, & V8 fusion

  2. The cucumber sandwiches look really good for a low-calorie light lunch. I might even bulk up the fruit/veggies and swap the dairy-free yogurt for a Chobani (I only need to be allergen-free if working in certain places like a nut-free school. Other than that, I don't worry about it.)

    I am confused about the mayo though. Isn't mayo supposed to be a blend of egg yolks, vinegar, and oil? Why not just use regular mayo? Is it a cross-contamination issue or are companies just adding other crap into something that only requires a few ingredients (maybe 5 including salt and seasonings)? I don't eat mayo (aside from in deviled eggs- it's a texture thing, really), so I'm really clueless about this. I just figured I can trust that you, of all people, would know that eggs are not dairy (just because they are next to the milk in the produce department doesn't mean eggs have dairy...) `

  3. These look amazing!! Such great ideas. Thank you! I find it ironic, everyone uses sunbutter to make allergy free sandwiches and I'm allergic to sunbutter (but not peanut butter lol). So happy I found your blog!!
