@HomeFreeTreats Chocolate Chip Cheesecake Cups #Recipe!

This past Saturday we celebrated Christmas with my family.
My folks are the most amazing individuals when it comes to Little Miss' food allergies/ intolerances. They keep a peanut free home and well stocked with gluten & nut free treats for her at all times. So lack of choices for my girl wasn't an issue, thankfully, because I had baked up a batch of these delicious {Gluten Free} Chocolate Chip Cheesecake Cups... aaaaand then left them at home in the fridge. *D'OH!*
 
 
Not that they would go to waste. No sir! Little Miss and I have been devouring savoring them on our own. Maybe a blessing in disquise I "forgot" them!? Hehe...
 
Super Simple to make and super delicious! You can use your prefered brand of {allergy friendly} cookies for the crust, but we chose our super yummy HomeFree Treats Gluten Free Chocolate Chocolate Chip Mini Cookies. <--- em="em">Best decision ever!
 
 
Ingredients:
Directions:
  1. Preheat oven to 350 degrees and line cupcake pan with liners.
  2. Mix crushed cookies with melted butter until fully saturated.
  3. Press one tablespoon of cookie mixtured into each cup.
  4. In a large bowl, mix together cream cheese, eggs, and sugar until fluffy.
  5. Fold in chocolate chips.
  6. Fill baking cups and bake for 20-22 minutes.
  7. Let cool 10 minutes.
  8. After cooling, top with additional chocolate chips (optional) then store in the refrigerator to set.
  9. ENJOY!
