Food for Thought: Cream Cheese & Chive Stuffed Chicken Breast with Bacon

I made this for dinner Friday evening and it was a huge hit! Little Miss devoured an entire chicken breast to herself even. lol


I've seen different variations of this recipe online before (here's one of them: http://allrecipes.com/Recipe/cream-cheese-garlic-and-chive-stuffed-chicken/detail.aspx) I made my own spin on it based on what I had on hand. :)

What I used:
3 boneless chicken breast halves
1 8oz container of whipped cream cheese
3 tbsp of dried chive seasoning
5 strips of bacon (would've liked 6 but I only had 5, lol)
3 toothpicks
3 tbsp of softened butter

First, with my meat pounder I flattened the chicken breasts until they were about an 1.5 inches thin.
I preheated my oven to 350 degrees and sprayed my glass baking dish with cooking spray.

I spread my cream cheese evenly on my chicken breasts, covering one whole side. I then sprinkled the chives over all three of them. The same with the butter.

I rolled my chicken breasts up and then wrapped them each with the strips of bacon, using a toothpick to hold them closed.


This is what they looked like going into the oven. :)

They cooked for about 40-45 minutes.


It was so delish! The cream cheese with the chicken was filling but not heavy which made for a great combo.

A recipe I was asked by my Little Miss and boyfriend to make again soon. WIN!
