Food for Thought: Breakfast Casserole

I've made this recipe before using precooked ham bits. You can also use bacon pieces, as well. Super easy, super simple. You can prepare it the night before or even freeze it - so its great when you have guests or even on Christmas morning so you're not in the kitchen the whole time!


What You'll Need:

1 pkg of Jimmy Dean's Fully Cooked Sausage Crumbles
5 large eggs, lightly beaten
1 cup of small curd cottage cheese
1-1/4 cups of shredded cheddar cheese
1/2 cup of shredded cheddar cheese (for topping)
1-1/4 cups of mozzerela cheese
3 cups of southern style diced potatoes/ hashbrowns THAWED
Option: Diced Onion or Peppers, if you desire

These are the sausage crumbles I used


Preheat over to 350 degrees and spray your dish with cooking spray.


In a large bowl, mix all ingredients together with the exception of appox 1/2 cup of cheddar cheese noted above for the topping.



Spread evenly in your dish and bake, uncovered, for approximately 40-50 minutes.


Add cheddar cheese at very end until melted.



So yummy & filling! (I'm still full, lol)

  1. YUM! Okay, here is your stupid question for the day: can this be frozen uncooked or cooked?

    Now, no laughing! I'm trying to get better about freezing, but clearly I am challenged in this department. Help me!
