Lunch Made Easy: A Week of {Gluten & Nut Free} School Lunches #AllergyFriendly

This is the first week Little Miss has all five days of school in a couple! We survived the snow storms this week - WOO! ;)

Here's our weekly round-up of Allergy Friendly School Lunches. {Gluten & Nut Free} & More:
 
MOMables Monday featured a favorite of Little Miss'... Cauliflower Crust Pizza!

Little Miss also had turkey roll-ups and mixed berries packed in her EasyLunchboxes container to complete this lovely heart filled lunch. 

This lunch is gluten free, grain free, and nut free. Sub the cheese for non-dairy soy or rice cheese for dairy free, as well!


On Tuesday, Little Miss packed lunch all by herself. She typically always helps and picks out items but she took the reigns for this lunch (minus cutting the carrot coins with a knife) and chose all the goodies for her strawberry bento box. 

Little Miss has a SunButter & Jelly sandwich on Udi's gluten, dairy, soy, and nut free whole grain bread. She decorated it with food safe markers and cut it into a heart shape.

She also packed raisins, grapes, carrot coins (she also decorated a few of them), gluten free Old Wisconsin brand beef stick bites, and Chobani Champions Strawberry Greek yogurt. 

Sub the yogurt for non-dairy soy or rice yogurt to keep this lunch completely dairy free. Also, choose a bread brand like Ener-G for an egg free lunch box too!

Wednesday we used our brand new Yubo Fairy Princess lunch box! I can already tell this is going to be a new favorite. Little Miss said all her girl friends at school loved it and so did she. I love the adorable box, ice pack that fits perfectly underneath (not pictured), and tightly sealed containers. 

In her lunch box is a ham & cheese flower shaped sandwich on Udi's gluten, dairy, nut, & soy free whole grain bread. She also has flower cut carrot coins, apple dices, and a cup of unsweetened applesauce with cinnamon sprinkled on top and a blueberry in the center. I also snuck in a sweet Lunchbox Love note for her to find at lunch hour. 

Sub or omit the cheese to keep this lunch entirely dairy free. As mentioned above, sub the bread brand depending on your allergies for a brand like Ener-G for an entirely egg free lunch too!


Thursday's lunch was a quickly packed and simple fix! I made Little Miss a SunButter & Jelly sandwich on Udi's gluten, nut, soy, & dairy free whole grain bread. I cut it using our heart cookie cutter and using the crust made the arrow going through it. The heart and "u" on top are made out of cheese and colored with food safe markers. 

She also has blueberries, pear dices, veggie chips, and two HomeFree mini vanilla cookies. These HomeFree cookies are peanut, tree nut, egg, dairy, wheat, soy, fish, shellfish, and sesame free. Also certified gluten free


Finally, for Friday, Little Miss has leftover gluten free Chili Mac in her thermos, "Whale Tail" tortilla chips that are gluten free, GMO free, & Kosher, carrot sticks, and a cut of blueberries & pear dices packed in LunchBots Duo

Chili Mac is so easy to make - About a 30 minute skillet meal and absolutely filling & delicious! 

Shot while we were waiting for the cheese to get all "melty" ~ Yum!
Ingredients:
  • 1 lb. of ground beef
  • 1 can of diced tomatoes with green chiles
  • 1 can of gluten free chili beans
  • 3/4 cup of uncooked gluten free macaroni noodles
  • 1 cup of frozen
  • 1/2 cup of water
  • 3/4 cup of shredded cheddar cheese
  • Optional- 2 tsp. of chili powder (I didn't add any because Little Miss doesn't like it too spicy)
  1. In a large skilled on your stove top, brown meat and drain.
  2. Stir in corn, undrained tomatoes, beans, uncooked macaroni noodles, and water.
  3. Bring to a boil. Reduce heat and cover. Simmer for approximately 15 minutes until noodles are tender.
  4. Top with shredded cheese. Cover and let stand until melted. 
Enjoy!
