Lunch Made Easy: Avocado & Bacon Grilled Cheese {Gluten Free}

I love the face made when she first tried avocado. She scrunched her nose and said "it tastes like nothing... and nothing doesn't taste very good". (haha, I love kid's perspectives.)
 
Since then I've been serving it to her mixed with other foods, while reiterating to her the nutritional value. Avocado are a nutrient dense food; a great source of fiber, vitamin C, and potassium.
 
Let's face it, bacon makes everything better... and my Little Miss is also referred to as "The Baconater" in our house. So, this yummy Avocado & Bacon Grilled Cheese sandwich gives her the bacon she loves and nutrients for Mama's piece of mind.
 
 
Her sandwich is on Udi's bread, which is gluten, soy, nut, & dairy free. Depending on your allergies, by using a different bread it can also be entirely egg free.

Sub the cheddar cheese used for your favorite alternative, like Galaxy Foods rice based or vegan slices, to keep the sandwich dairy free.
 
 
Little Miss also has a pick of red seedless grapes, veggie chips, and a mini-dipper filled with Enjoy Life Mountain Mambo trail mix which is free of the Top 8 Allergens.

  4. good call on recommending the Galaxy Foods slices... most vegetarian slices still have milk proteins in them... very deceptive for those who can't have milk... and for those with a true allergy, it's worse because the one they use is casein, the protein most people with an allergy are actually allergic to... so getting vegan is the best bet to not have to read the ingredients list to make sure it's really milk free.

    That looks so yummy, btw, and great idea to add bacon as a flavor boost along with avocado for a nutrient boost to the traditional grilled cheese.
