Lunch Made Easy: Ice Cream Sandwich

It looks pretty busy inside this EasyLunchBox but it only took, maybe, 7-8 minutes to put together.

Little Miss saw it and *gasped* with excitement! Score one for Mama.


Little Miss' all time favorite ice cream is Mint Chocolate Chip, so I decorated cheese cut out in the shape of an ice cream cone to look like her favorite.

Sitting on top of a turkey sandwich on Udi's (gluten, dairy, soy, & nut free) bread. The sandwich is surrounded by veggie straws, cauliflower (I thought they looked like vanilla ice cream scoops), baby carrots, and grapes.

Top left are watermelon slices cut out with a mini flower shape cutter and a yellow ice cream cone pick.
Top right is a yummy mix to mimic her favorite ice cream flavor - Chobani Vanilla Greek yogurt with Andes Creme de Menthe baking chips sprinkled on top. YUM!

In case you didn't know, the Tootsie Roll Co. is one of my favorite companies for being nut, peanut, and gluten free. These Andes baking chips are part of that family.

    Actually, those cauliflower look almost like ice cream.... wonder how they'd look in a cone...

  3. I'm new to bento. Actually, I'm still just researching boxes. Can you tell me how you keep the yogurt in place during transit to school? Plastic wrap or something? Sorry if that's a dumb question.

    1. There are no dumb questions! ;)
