Lunch Made Easy: Lazy Day Tacos
Ahh Friday! This week has flown by... we've been so busy (but all good things). Yesterday we took a road trip to visit family. Our LONG day trip involved 8 hours of Mama driving, so when we stumbled in at 1am I was tiiiiired. Here is lunch time ~ Little Miss and I are still in our jammies. We'll be productive this afternoon. I promise. ;) lol

Lunch Made Easy: Christmas Dinner
What a busy morning! I just got back from Little Miss's school - today is their last day before break. I went because I dropped her off lunch, warm. :)
Let me explain - Today at her school, all the kids are partaking in "Christmas Dinner" for lunch. The school is providing free of charge for all students Ham, Potatoes & Gravy, Corn, Rolls, and misc Desserts. Since I already know they cannot guarantee me that the food does not have peanuts, peanut warnings, or been cross-contaminated in their kitchens I always make her lunches.
She was bumming because she wanted to have lunch just like everyone else (minus a few other students with allergies too). So I surprised her with a lunch just like the other kids, that I know is safe for her, and dropped it off so it'd be warm and ready to eat for lunch time. She was so thrilled!!

Lunch Made Easy: Holiday Delight
Thursday. Three days left until Christmas.
*insert panic attack here*
I kid, I kid... I still do have quite a few things to do/buy, but they are easy last minute type pickups - I've just been too swamped to get them taken care of already! Thankfully, I have Friday off work and Little Miss will be at school, so after chapel I can get them all done!! (That's the plan anyways *fingers crossed*.)

Lunch Made Easy: Five Golden Rings!
I was on the road all day for work today. When I got home this evening I was spending some time with Little Miss and she reminded me ;) there were only 5 more days left until Christmas tomorrow (Tuesday)!
I asked her if she had any ideas for her lunch... she pondered "five, hmm... hmm..." and then screamed "GOLDEN RINGS!" I should've known!
We sing the 12 days of Christmas song together - well I sing it for her until we get to 5, that's her cue. She'll then belt out her one line "five golden rings!" and then giggles as I continue singing. :)
I couldn't have thought of a more perfectly perfect lunch to incorporate the number five for our *Advent Lunches* countdown.

Lunch Made Easy: Birds of a Feather
Not gonna lie... when I started making Little Miss's sandwich, I had intended it to be a penguin buuuuuuut it looks more like a bird. So... BIRD IT IS! :)

Lunch Made Easy: Every Day is a Gift
*Yawn* Pardon me - we were at the Lions v Viking games today and I am tiiiiiirrrrrred. We got home no too long ago. Carried Little Miss straight to bed (her grandma had her already in her pj's for me - THANK YOU!), grabbed a quick snack (since the last thing I ate was a hot dog at the game at 1pm), began making lunches and now I'm posting quickly so I can crawl into my marshmallow of a bed. Mmm... lol

I've seen a couple variations of a "vegetable Christmas tree" on Pinterest and Google - some made of cucumbers, some of sugar snap peas... I decided to make Little Miss a Spinach Tree. :)

Oh yeah, you heard me... Junior Mint Cookies. I know what you're thinking - Junior Mints AND Cookies? Those are two incredibly powerful forces being combined. I know. It's amazing. Trust me.
When I was trying think up some cookie ideas, this came to me. I thought about my Junior Mint Brownies (<--- click name for recipe & info) and how the topping made that delicious minty shell when cooled. I figured that HAD to be amazing on a cookie, right? Oooohhhh yeah.

It started when I fell in love with Astrid's Rainbow Pain de Mie over at Lunches Fit for a Kid. I wanted to make just a regular bread rather than pain de mie, however, a rainbow didn't go with my advent lunches I've been making so I figured why not use the same idea but with only red & green! Holiday bread!
