As I type, the snow is coming down outside... it has been since late afternoon here. *sigh*
Little Miss was excited though ~ She said it looked like Christmas! Then asked to go build a snowman... lol, so the lunch for Wednesday is fitting. :)
Today's lunch is simple in nature, but includes a new yummy nut free spread I want to tell you about!
I've included my advent countdown, as mentioned in yesterday's post -- On Tuesday, there will 26 days left until Christmas!
I had the idea to make Little Miss's lunches an advent, of sorts. :) Every day I intend to somewhere include a number somehwere in her lunch with how many days are left until Christmas. As of Monday, there will be 27 days left. She was VERY excited when I told her I'd be doing this!
I've been crafting and prepping for Thanksgiving most of the evening. In fact, there are pies baking as I type. :)
One item I finished just before the pies went into the oven were these Spinach Pinwheels. They're going to make a great appetizer for tomorrow while we're watching football and before we gorge eat later in the day.
I was completely inspired to do this project this afternoon with Little Miss by One Artsy Mama - She posted a picture of a pumpkin her family had done on her facebook page and I thought it was such a great idea!
We happened to have two little pumpkins still in great condition from Halloween that were untouched. So after lunch, Little Miss and I set out together to make our "Thankful Pumpkins".

The good news it, we just have to make it through this week - then it's a nice long weekend for the Holiday! (Even though it seems like we're always busy, it'll be nice.)
Little Miss is off school tomorrow (Friday) so I thought this might be a good time to tackle the next Bento of the Week challenge - Onigiri.
I have never done anything with rice like this before, so I was a bit nervous... I figured since Little Miss was going to be home with me while enjoying this, what they hey... good time to go for it! That way, if it was a hot mess, at least I was home to make her something else (LOL).
Well, when it was all said and done, I was pretty darn impressed with how it turned out!
Little Miss is off school today and tomorrow for conferences, so I get a break for making her lunch!
Mama still needs to eat though. ;)
I'm in a group on FB with a lot of the other Bento Bloggers. We were discussing how long it takes us, on average, to put the lunches together and I mentioned that I usually make mine the same time as I'm putting together lunch for Little Miss. So today, I figured, why not highlight a typical "Mama Bento".
I made this for Little Miss for her lunch tomorrow (Wednesday) at school. :) I'm so happy with how it turned out!

This has just the right amount of sweet & spice. I have never made Salmon in the crockpot before, so I was nervous (to say the least) but this is definitely something I will do again! :) I looooooove Salmon.
Yes. Bologna Salad. A favorite of Little Miss and actually was when I was a kid too... We joke that it's the "poor mans Ham Salad" (sandwich spread) because my mother would eat it growing up when they didn't have much money. Thus why we grew up with it too. :)
I haven't made it for Little Miss in a looooong time so I figured it'd be a nice treat for her today, so I made some last night.
Last night I was so happy to hear that big brown UPS truck pull infront of my house. I knew exactly what it was - My new Easy Lunchboxes! Even though to Little Miss, the only difference she'll notice is the fun lid colors, I like how much thicker they are than my disposables. Plus they're also dishwasher, microwave, and freezer safe - Win!
I also realized this morning I had not had a Hello Kitty appearance in quite sometime (that is just unacceptable, especially considering how much Little Miss LOVES her).
